Ingredients:
- Oil 4 tbs
- Pyaz (Onion) Sliced 1 medium
- Rai dana (Mustard seeds) 1 tsp
- Sabut lal mirch (Button red chilies) 6-8
- Haldee powder (Turmeric powder) 1 tsp
- Mong phali (Peanuts) Salted ¼ cup
- Chawal (Rice) 2 & ½ Cups (Cooked)
- Namak (Salt) 1 tsp or to taste
- Khopra (Coconut desiccated) 2-3 tbs
- Podina (Mint leaves) Chopped 3 tbs
- Kari pata (Curry leaves) Handful
- Hari mirch (Green chilies) 3
- Lemon Juice 2-3 tbs
- Lemon zest 1 tsp
- Pani (Water) 2-3 tbs
Directions:
In pot,add oil and onion, fry until translucent.
Add mustard seeds,button red chilies,turmeric powder,peanuts and fry for 1-2 minutes.
Add cooked rice and salt,mix well.
Add coconut dessicated,mint leaves,curry leaves,green chilies,lemon juice and lemon zest,mix well.
Add water,cover and simmer for 8-10 minutes on low flame.
Serve with bottle gourd raita.
Lauki (Bottle Gourd) ka Raita
Ingredients:
- Lauki (Bottle Gourd) Peeled & shredded ¾ Cup
- Reserve ¼ cup of lauki water
- Dahi (Yogurt) Thick 2 Cups
- Namak (Salt) ½ tsp or to Taste
- Chaat Masala 1 tsp
- Hara dhania (Coriander) chopped 2 tbs
- Lehsan paste (Garlic paste) 2 tsp
- Bottle gourd water ¼ Cup
- Oil 1-2 tbs
- Zeera (Cumin seeds) 1 tsp
- Hari mirch (Green chilies) Chopped 2
- Sabut lal mirch (Button red chilies) 3-4
Directions:
In saucepan,add water and peeled & shredded bottle gourd,boil until done,strain and reserve ¼ cup of lauki water and set aside.
In bowl,add yogurt,salt,chaat masala,coriander,garlic paste,boil bottle gourd and bottle gourd water, mix well.
In frying pan,add oil,cumin seeds,green chilies and button red chilies and sauté for a minute.
Now add tadka on yogurt mixture and mix well.
Bottle gourd raita is ready.

Pot mein oil aur pyaz dal ker translucent hunay tak fry karein.
Rai dana,sabut lal kirch,haldee powder aur mong phali dal ker 1-2 minute kliya fry karein.
Cooked chawal aur namak dal ker ache tarhan mix ker lein.
Khopra,podina,kari pata,hari mirch,lemon juice aur lemon zest dal ker mix ker lein.
Pani dal ker dhak ker 8-10 minute kliya halki ancch per dum per rakh dein.
Lauki ka raita ka saath serve karein.

Directions:
Saucepan mein pani aur peeled & shredded lauki dal ker boil karein,strain ker ka ¼ cup lauki ka pani ko nikal ker side per rakh dein.
Bowl mein dahi,namak,chaat masala,hara dhania,lehsan paste,boil lauki aur lauki ka pani dal ker ache tarhan mix ker lein.
Fryina pan mein oil,zeera,hari mirch aur sabut lal mirch dal ker ek minute kliya saute karein.
Ab tadka ko dahi mixture ka upper dal ker mix ker lein.
