Ingredients:
Prepare Custard:
- Doodh (Milk) 2 & ½ Cups
- Cheeni (Sugar) 1/4 Cup
- Cottage cheese crumbled 100 gms
- Rafhan custard powder 5 tbs
- Doodh (Milk) ½ Cup
Prepare Sugar Syrup:
- Pani (Water) ½ Cup
- Cheeni (Sugar) 1/3 Cup or to taste
- Rose water 1 tbs
- Lemon slice 1
Prepare Semolina Pancakes:
- Pani (Water) lukewarm 1 & ½ Cups
- Cheeni (Sugar) 2 & ½ tbs
- Khameer (Instant yeast) ½ tbs
- Maida (All-purpose flour) sifted 2 Cups
- Sooji (Semolina) ½ Cup
- Rafhan custard powder 2 tbs
- Baking powder ½ tsp
- Namak (Salt) ½ tsp
- Neem garam doodh (Lukewarm milk) ½ Cup
- Pista (Pistachios) chopped
Directions:
Prepare Custard:
In saucepan,add milk and bring it to boil.
Add sugar,cottage cheese,mix well and cook until sugar is dissolved .
In custard powder,add milk and whisk well.
Gradually add dissolve custard,mix well and cook until custard is thick.
Turn off the flame and whisk continuously until cools down.
Prepare Sugar Syrup:
In saucepan,add water,sugar,rose water,lemon slice,mix well and cook on low flame until sugar dissolves and continue cook until syrup becomes thick & let it cool down.
Prepare Semolina Pancakes:
In small jug,add lukewarm water,sugar,instant yeast and mix well,cover and let it rest for 10 minutes.
In bowl,add all-purpose flour,semolina,custard powder,baking powder,salt and whisk well.
Now add yeast mixture and whisk well.
Add lukewarm milk and whisk until well combined.
Cover and let it rest for 30 minutes.
In frying pan,pour ¼ cup of prepared batter and cook on low flame and allow to gently cook on one side,without flipping on the other side,until lots of bubbles form around the surface of the pancake.Leave it to cook longer until the surface is no longer wet and the bottom is light golden brown.
Cover with kitchen towel until ready to use.
Repeat the same for all the pancakes (makes 18-20).
With the bubbly side facing up,fill each pancake with prepared custard filling.
Fold the pancake in half and pinch the sides firmly with your fingertips to seal and garnish chopped pistachios.
Refrigerate until chill.
On serving platter,place qatayef pancakes and drizzle prepared sugar syrup & serve!

Cheeni aur cottage cheese dal ker ache tarhan mix karein aur cheeni ghul janay tak paka lein.
Custard powder mein doodh dal ker ache tarhan whisk kerain.
Thora thora ker ka dissolve custard shamil karein aur mix kertay rahein aur custard garha hunay tak paka lein.
Chulha bund ker dein aur musalsal whisk kertay hoye he thanda ker lein.
Prepare Sugar Syrup:
Saucepan mein pani,cheeni,rose water aur lemon slice dal ker ache tarhan mix karein aur halki ancch per cheeni ghul janay ayr sheera garha hunay tak paka lein & thanda ker lein.
Prepare Semolina Pancakes:
Chotay jug mein neem garam pani,cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 10 minutes kliya rakh dein.
Bowl mein maida,sooji,custard powder,baking powder aur namak dal ker ache tarhan whisk karein.
Ab yeast mixture dal ker ache tarhan whisk ker lein.
Neem garam doodh shamil karein aur ache tarhan whisk ker lein.
Dhak ker 30 minutes kliya rakh dein.
Frying pan mein 1/4 cup tayyar batter dal dein aur halki ancch per ek side ko paka lein aur flip nahi kerna hai,jab tak surface per bubbles nahi ajayein aur surface wet na rahay aur bottom ka color light golden brown ho jaye.
Istamal kernay tak kitchen towel sa dhak ker rakh dein.
Is he tarhan baqi pancakes bhi tayyar ker lein (makes 18-20).
Pancakes ki bubble side per tayyar custard filling dal dein.
Pancakes ki half side ko fold ker lein aur sides ko fingertips ki madad sa pinch ker ka seal ker lein aur chopped pista sa garnish ker lein.
Refrigerator mein thanda ker lein.
Serving platter mein qatayef pancakes dal ker tayyar sheera drizzle ker ka serve karein.
