In frying pan,add cumin seeds,coriander seeds,fennel seeds,mustard seeds and roast until fragrant & let it cool down.
In spice mixer,add roasted spices and blend to make a coarse powder & set aside.
In bowl,add blended coarse powder,lemon juice,ginger garlic paste,salt,mustard oil,mix well & set aside.
Slit green chilies with the help of the knife and stuffed with prepared spice mix.
In pot,add cooking oil,cumin seeds,ginger and mix well.
Now add stuffed green chilies,turmeric powder,mix well for 2-3 minutes.
Add remaining spice mix and mix well.
Add water and mix,cover and cook on low flame for 5-6 minutes then cook on high flame until oil separates.
Can be store in air tight box for up to 2-3 weeks.

Spice mixer mein roasted spices dal dein aur blend ker ka coarse powder tayyar ker lein & side per rakh dein.
Bowl mein blended coarse powder,lemon juice,adrak lehsan paste,namak aur sarson ka tel dal ker ache tarhan mix karein & side per rakh dein.
Hari mirchon ko knife ki madad sa slit laga lein aur tayyar spice mix bhar dein.
Pot mein cooking oil,zeera aur adrak dal ker ache tarhan mix karein.
Ab stuffed hari mirchein aur haldee powder dal ker 2-3 minutes kliya ache tarhan mix karein.
Baqi bacha huwa soice mix bhi shamil karein aur ache tarhan mix ker lein.
Pani dal ker mix karein aur dhak ker halki ancch per 5-6 minutes kliya paka lein phir tez ancch per oil alag hunay tak paka lein.
Air tighr jar mein dal ker 2-3 weeks kliya store ker saktay han.
