Ingredients:
Prepare Green Chutney:
- Lehsan (Garlic) cloves 3-4
- Hari mirch (Green chilies) 3-4
- Namak (Salt) ¼ tsp or to taste
- Hara dhania (Fresh coriander) 1 cup
- Podina (Mint leaves) 1 cup
- Pani (Water) ¼ cup or as needed
Prepare Khatti Meethi Chutney:
- Aloo Bukhara (Dried plums) soaked & deseeded ½ Cup
- Khajure (Dates) deseeded 4-5
- Imli pulp (Tamarind pulp) ½ cup
- Saunf (Fennel seeds) crushed 1 tbs
- Lal mirch (Red chili) crushed 1 tsp
- Kala namak (Black salt) ¼ tsp
- Namak (Salt) ¼ tsp or to taste
- Cheeni (Sugar) 3-4 tbs or to taste
Prepare Palak Patta:
- Besan (Gram flour) 1 & ½ cups
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Dhania (Coriander seeds) roasted & crushed 1 tsp
- Namak (Salt) ½ tsp or to taste
- Pani (Water) ¾ cup or as required
- Palak (Spinach) small leaves 15-20
- Cooking oil for frying
Assembling:
- Palak patta (Spinach leaves) fried
- Hari moong daal (Green lentil gram) soaked & boiled
- Chanay (Chickpeas) soaked & boiled
- Aloo (Potato) boiled small cubes
- Pyaz (Onion) chopped
- Tamatar (Tomato) chopped
- Dahi (Yogurt) whisked
- Prepared green chutney
- Prepared khatti meethi chutney
- Nimco sev as needed
- Anaar (Pomegranate seeds)
- Lal mirch (Red chili) crushed to sprinkle
- Chaat masala pinch to sprinkle
- Hara dhania (Fresh coriander) chopped
Directions:
Prepare Green Chutney:
In blender jar,add garlic,green chilies,salt,fresh coriander,mint leaves and water,blend well & set aside.
Prepare Khatti Meethi Chutney:
In saucepan,add soaked & deseeded dried plums,dates,tamarind pulp and mix well,bring it to boil and cook for 2-3 minutes.
Add fennel seeds,red chili crushed,black salt and salt,mix well then turn off the flame and blend until smooth with a help of hand blender.Turn on heat,add sugar,mix well and cook for 2 minutes or until desired consistency & set aside.
Prepare Palak Patta:
In a bowl,add gram flour,red chili powder,roasted & crushed cumin seeds,roasted & crushed coriander seeds,salt and mix well.
Gradually add water and whisk until batter is smooth and let it rest for 5 minutes.
In wok,heat cooking oil and dip spinach leaves in gram flour batter and fry on medium flame until golden brown.
Assembling:
To assemble palak chaat,in a platter,add spinach pakoras,green lentil gram,chickpeas,potato cubes, onion,tomato,yogurt,prepared green chutney,prepared khatti meethi chutney,nimco sev,pomegranate seeds and sprinkle red chili crushed,chaat masala,fresh coriander & serve!

Blender mein lehsan,hari mirch,namak,hara dhania,podina aur namak dal ker ache tarhan blend karein & side per rakh dein.
Prepare Khatti Meethi Chutney:
Saucepan mein soaked & deseeded aloo bukhara,khajure aur imli pulp dal ker ache tarhan mix karein aur ubal anay ka bad 2-3 minutes kliya paka lein.
Saunf,lal mirch crushed,kala namak aur namak dal ker ache tarhan mix karein aur chulha off ker dein aur hand blender ki madad sa ache tarhan blend ker lein.Chulha on karein aur cheeni dal ker ache tarhan mix karein aur 2 minutes ya desired consistency anay tak paka lein & side per rakh dein.
Prepare Palak Patta:
Bowl mein besan,lal mirch powder,zeera,dhania aur namak dal ker ache tarhan mix karein.
Thora thora ker ka pani shamil karein aur ache tarhan whisk ker ka smooth batter tayyar ker lein & 5 minutes kliya rakh dein.
Karhai mein cooking oil garam karein aur palak ka patton ko besan ka batter mein dip ker ka darmiyani ancch per golden brown hunay tak fry ker lein.
Assembling:
Platter mein palak pakora,hari mong daal,chanay,aloo,pyaz,tamatar,dahi,tayyar hari chutney,tayyar khatti chutney,nimco sev,anaar,lal mirch crushed,chaat masala aur hara dhania dal ker serve karein.
