Ingredients:
- Chicken boneless cubes ½ Kg
- Adrak lehsan paste (Ginger garlic paste) 1 tbs
- Kacha papita (Raw papaya) paste 1 tbs
- Namak (Salt) 1 tsp or to taste
- Bhunay chanay (Roasted grams) 3 tbs
- Badam (Almonds) 6
- Sabut kali mirch (Black pepper corns) 8-10
- Laung (Cloves) 4
- Hari elaichi (Green cardamom) 3-4
- Jaifil (Nutmeg) ½ piece
- Javatri (Mace) 4-5 strands
- Darchini (Cinnamon stick) 1
- Zeera (Cumin seeds) 1 tsp
- Kala zeera (Caraway seeds) ½ tsp
- Pyaz (Onion) fried 2 large
- Dahi (Yogurt) strained 2 tbs
- Lal mirch powder (Red chili powder) 1 tsp
- Haldee powder (Turmeric powder) ¼ tsp
- Makhan (Butter) 1 tbs
- Koyla (Charcoal)
- Oil for frying
Directions:
In chicken boneless cubes,add ginger garlic paste,raw papaya paste and salt,mix well & refrigerate for 30 minutes.
In frying pan,add roasted grams,almonds,black pepper corns,cloves,green cardamom,nutmeg,mace, cinnamon stick and roast until fragrant.
Add cumin seeds and caraway seeds and mix for 30 seconds,set aside and let it cool.
In spice mill,add roasted spices and grind to make a fine powder & set aside.
In blender,add fried onion,yogurt and blend well.
In chopper,add marinated chicken,onion yogurt mixture,ground spices,red chili powder,turmeric powder,butter and chop until well combined & give it a coal smoke for 2 minutes.
Grease your hands with oil,take a mixture and make a kebabs/patties of equal sizes (makes: 14-15 Kebabs).
In frying pan,heat oil and fry kebabs from both sides until golden brown.

Frying pan mein bhunay chanay,badam,laung,sabut kali mirch,laung,hari elaichi,jaifil,javatri aur darchini dal ker khusbhu anay tak roast ker lein.
Zeera aur kala zeera dal ker 30 seconds kliya ache tarhan mix karein aur side per rakh ker thanda ker lein.
Spice mill mein roasted spices dal ker ache tarhan grind karein aur fine powder tayyar ker lein & side per rakh dein.
Blender mein fried pyaz aur dahi dal ker ache tarhan blend ker lein.
Chopper mein marinated chicken,pyaz dahi mixture,grounded spices,lal mirch powder, haldee powder aur makhan dal ker ache tarhan chop ker lein aur 2 minutes kliya koyla ka dhuwan dein.
Haathon ko oil sa grease karein aur mixture ka ek jaisay size ka kebabs/patties tayyar ker lein (makes: 14-15 Kebabs).
Frying pan mein oil garam karein aur kebabs ko dono sides sa golden brown fry ker lein.
