Ingredients:
Prepare Halwa:
-Ghee (Clarified butter) 5 tbs
-Sooji (Semolina) 1 Cup
-Badam (Almonds) chopped 3-4 tbs
-Water 2 Cups or as required
-Sugar ½ Cup or to taste
-Elaichi powder (Cardamom powder) ½ tsp
Prepare Almond Praline:
-Sugar ¾ Cup
-Water 4 tbs
-Badam (Almonds) 1 Cup
-Ice cubes
-Olper’s Cream chilled 1 Cup
Directions:
Prepare Halwa:
-In a wok,add clarified butter & let it melt.
-Add semolina,mix well & cook on low flame for 8-10 minutes.
-Add almonds,mix well & cook on low flame for 4-5 minutes.
-Add water,sugar & mix well.
-Add cardamom powder,mix well & cook on low flame until it dries up (3-4 minutes) & transfer to a piping bag with a nozzle.
Prepare Almond Praline:
-In a frying pan,add sugar,water & cook on low flame until sugar is dissolved.
-Add almonds,mix well & cook on low flame until sugar caramelizes & turns brown (stir pan gently in between) than transfer to a silicon mat,spread evenly & let it cool completely.Almond praline is ready than break into pieces & reserve a piece for garnish.
-In grinder,add remaining pieces,grind well to make a smooth paste & set aside.
-In a large bowl,add ice cubes & place another bowl on it.
-Add cream & beat until stiff peaks form.
-Add almond praline paste & beat until well combined than transfer to a piping bag with a nozzle.
-Finley chop reserved almond praline with the help of knife & set aside.
Assembling:
-In a serving cup,pipe out prepared halwa & prepared creamy almond praline.
-Garnish with almond praline & serve chilled (makes 8-10 jars).
