Ingredients:
Prepare Cremeux:
-Water 1 Cup
-Olper’s Milk powder ½ Cup
-Whipping cream 1 Cup
-Himalayan pink salt 1 pinch or to taste
-Vanilla essence 1 tsp
-Anday ki zardi (Egg yolks) 4
-Bareek cheeni (Caster sugar) 1 & ½ tbs
-White chocolate chopped 350g
Prepare Kunafa Filling:
-Makhan (Butter) 3 tbs
-Kataifi dough 150g
-Pista (Pistachios) roasted 150g
-Cooking oil 2 tsp
-White chocolate melted 100g
-Olper’s Cream 2 tbs (room temperature)
-Green food color 2-3 drops
Assembling:
-Chocolate sponge cake
-Sugar syrup
-Chocolate ganache
-Pistachio cream
Directions:
Prepare Cremeux:
-In a saucepan,add water,milk powder,whipping cream,pink salt,vanilla essence & whisk until well combined.
-Turn on the flame & cook on low flame for 1-2 minutes (Stir continuously).
-In another bowl,add egg yolks,caster sugar & whisk well.
-Gradually add ½ cup of cream mixture & mix to tamper eggs.
-Now pour all the mixture of bowl in saucepan & cook on low flame until it thickens & mix continuously.
-Add white chocolate,mix well & cook on low flame until chocolate melts.
-Turn off the flame & blend well until its smooth in texture.
-Transfer to a bowl & let it rest for 5 minutes than cover the surface with cling film & refrigerate for 4 hours or until set.
-Remove cling film,transfer to a piping bag & set aside.
Prepare Kunafa Filling:
-In a frying pan,add butter & let it melt.
-Add kataifi dough & cook on low flame until light golden.
-Let it cool.
-In a grinder,add pistachios & grind well.
-Add cooking oil & grind well.
-Add white chocolate,cream,green food color & grind well.
-Transfer to a bowl (reserve 2-3 tbs for garnish),add roasted kataifi dough,mix well & set aside.
Assembling:
-In a serving cup,place chocolate sponge cake & apply sugar syrup on it.
-Add prepare pistachio kunafa filling & press gently.
-Pipe out prepared cremeux,add & spread chocolate ganache on it.
-Decorate with pistachio cream & serve chilled (makes 6).
