Mediterranean Chicken & Rice Bowl

Ingredients:

Prepare Mediterranean Chicken:

-Fresh basil leaves handful

-Lehsan (Garlic) cloves 3-4

-Paprika powder ½ tsp

-Kali mirch (Black pepper) crushed ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Tomato paste 1 tbs

-Mustard paste ½ tbs

-Lemon juice 1 tbs

-Olive oil 2 tbs

-Chicken fillets 2 (375g)

-Cooking oil 2-3 tbs

Prepare Rice:

-Olive oil 1-2 tbs

-Pyaz (Onion) chopped 1 small

-Lehsan (Garlic) chopped 1 tsp

-Chawal (Rice) 2 Cups (boiled with salt)

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Himalayan pink salt ¼ tsp or to taste

-Hara dhania (Fresh coriander) chopped 1-2 tbs

Prepare Veggi & Feta Salad:

-Kheera (Cucumber) 1 medium

-Pyaz (Onion) 1 medium

-Cherry tomatoes halved 1 Cup

-Kali mirch powder (Black pepper powder) ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Lemon juice 1 tbs

-Hara dhania (Fresh coriander) chopped 1 tbs

-Feta cheese 100g

Prepare Tzatziki Sauce:

-Dahi (Yogurt) hung 200g

-Lehsan (Garlic) 2 cloves

-Lemon juice 1 tsp

-Kali mirch (Black pepper) crushed to taste

-Himalayan pink salt ½ tsp or to taste

-Kheera (Cucumber) grated & squeezed 1 medium

-Hara dhania (Fresh coriander) chopped handful

-Olive oil 1-2 tsp

 

 

Directions:

Prepare Mediterranean Chicken:

-In a grinder,add fresh basil leaves,garlic,paprika powder,black pepper crushed,pink salt,tomato paste, mustard paste,lemon juice,olive oil & grind well to make a thick paste.

-On chicken fillets,add prepared marinate,rub & coat well,cover & marinate for 30 minutes.

-In cast iron pan,add cooking oil & cook marinated fillet from both sides until done (8-10 minutes),rest it for few minutes than cut into slices & set aside.

Prepare Rice:

-In a wok,add cooking oil,onion,garlic & sauté for 2 minutes.

-Add boiled rice,cumin seeds,black pepper powder,pink salt,fresh coriander,mix well & set aside.

Prepare Veggi & Feta Salad:

-In a bowl,add cucumber,onion,cherry tomatoes,black pepper crushed,pink salt,lemon juice,fresh coriander & toss well.

-Add feta cheese & set aside.

Prepare Tzatziki Sauce:

-In a bowl,add yogurt,garlic,lemon juice,black pepper crushed,pink salt & whisk well.

-Add cucumber,fresh coriander & mix well.

-Drizzle olive oil & set aside.

-On serving plate,add prepared rice,Mediterranean chicken fillet,prepared veggie & feta salad & tzatziki sauce & serve!
