Ingredients:
Prepare Malai Tikka:
-Dahi (Yogurt) whisked ½ Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Himalayan pink salt 1 & ½ tsp or to taste
-Dhania powder (Coriander powder) ½ tbs
-Safed mirch powder (White pepper powder) ½ tsp
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Lemon juice 1 tbs
-Olper’s Cream ½ Cup (room temperature)
-Chicken tikka pieces 3 (750g)
-Cooking oil 2-3 tbs
-Olper’s cream ¼ Cup (room temperature)
-Olper’s Milk ½ Cup
Prepare Rice:
-Cooking oil 2-3 tbs
-Laung (Cloves) 2-3
-Badiyan ka phool (Star anise) 1
-Darchini (Cinnamon sticks) 2
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) chopped 1 small
-Lehsan (Garlic) chopped 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 tbs
-Dahi (Yogurt) whisked ½ Cup
-Chicken powder 1 & ½ tbs
-Himalayan pink salt 2 tsp or to taste
-Water 4 Cups or as required
-Chawal (Rice) basmati 500g (soaked 1 hour)
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Malai Tikka:
-In a bowl,add yogurt,red chilli crushed,cumin powder,black pepper powder,pink salt,coriander powder, white pepper powder,ginger garlic crushed,green chilli paste,lemon juice,cream & mix well.
-Make deep cuts on chicken tikka pieces,in marinade,add chicken,mix & coat well,cover & marinate for 2 hours.
-In a frying pan,add cooking oil,marinated chicken & cook on medium flame for 2-3 minutes (reserve remaining marinade for later use),turn sides & cook on medium flame for 2-3 minutes,cover & cook on low flame until chicken is tender (8-10 minutes) & cook on high flame from both sides until golden.
-Place grill on stove & grill chicken tikka pieces from both sides until charred & apply cooking oil in between.
-In the same frying pan,add reserved marinade,cream,milk,mix well & cook on medium flame for 2-3 minutes.
-Add charred chicken pieces in cooked creamy gravy & pour gravy,cook for a minute & set aside.
Prepare Rice:
-In a pot,add cooking oil,cloves,star anise,cinnamon sticks,cumin seeds,onion,garlic,green chilli paste, mix well & cook for 1-2 minutes.
-Add yogurt,chicken powder,pink salt,mix well & cook on medium flame for 2 minutes.
-Add water,mix well & bring it to boil.
-Add rice,mix & cook on medium flame until water is reduced (3-4 minutes),cover & steam cook on low flame for 10-12 minutes.
-On a platter,add cooked rice,chicken malai tikka,sprinkle fresh coriander & serve!

-Chicken tikka pieces mein deep cuts laga lein,marinade mein chicken dal ker ache tarhan mix aur coat ker lein aur dhak ker 2 hours kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal ker darmiyani ancch per 2-3 minutes kliya paka lein (reserve remaining marinade for later use),sides ko turn ker lein aur darmiyani ancch per 2-3 minutes kliya paka lein,dhak dein aur halki ancch per chicken gul janay tak paka lein (8-10 minutes) & tez ancch per dono sides sa golden ho janay tak paka lein.
-Chulhay per grill rakh dein aur chicken tikka pieces ko dono sides sa charred ho janay tak grill ker lein aur bech mein cooking oil laga lein.
-Us he frying pan mein reserved marinade,cream aur doodh dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Charred chicken pieces ko cooked creamy gravy mein dal ker gravy pour ker lein aur ek minute kliya paka lein & side per rakh dein.
Prepare Rice:
-Pot mein cooking oil,laung,badiyan ka phool,darchini,zeera,pyaz,lehsan aur hari mirch paste dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Dahi,chicken powder aur pink salt dal ker ache tarhan mix karein aur darmiyani ancch per 2 minute kliya paka lein.
-Pani dal ker ache tarhan mix karein aur ubal anay dein.
-Chawal dal ker mix karein aur darmiyani ancch per pani reduced ho janay tak paka lein (3-4 minutes) aur dhak ker halki ancch per 10-12 minutes kliya steam cook ker lein.
-Platter mein cooked rice,chicken malai tikka aur hara dhania dal ker serve karein!
