Ingredients:

Prepare Fajita Seasoning:

-Lal mirch powder (Red chilli powder) ½ tbs or to taste

-Himalayan pink salt 1 tsp or to taste

-Lehsan powder (Garlic powder) 1 & ½ tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Zeera powder (Cumin powder) 1 tsp

-Cayenne powder ½ tsp

-Onion powder 1 & ½ tsp

-Dried oregano 1 & ½ tsp

-Paprika powder ½ tbs

Prepare Chicken Fajita Rice:

-Falak Extreme Basmati Rice 350g

-Water as required

-Water as required

-Himalayan pink salt 2 tsp or to taste

-Cooking oil 2-3 tbs

-Lehsan (Garlic) chopped 1 tbs

-Boneless chicken julienne 350g

-Tomato paste 2 tbs

-Chicken powder ½ tbs (optional)

-Pyaz (Onion) sliced 1 medium

-Yellow bell pepper julienne 1 medium

-Shimla mirch (Capsicum) julienne 1 medium

-Red bell pepper julienne 1 medium

-Lemon juice 1 tbs

Prepare Fire Roasted Salsa:

-Tamatar (Tomatoes) 2 large

-Jalapenos 2-3

-Pyaz (Onion) 1 medium

-Lehsan (Garlic) cloves 4-5

-Hara dhania (Fresh coriander) handful

-Himalayan pink salt ½ tsp or to taste

-Kali mirch (Black pepper) crushed ¼ tsp

-Lemon juice 2 tbs

 

Directions:

Prepare Fajita Seasoning:

-In a small jar,add red chilli powder,pink salt,garlic powder,black pepper powder,cumin powder,cayenne pepper,onion powder,dried oregano,paprika powder & shake well.Fajita seasoning is ready!

Prepare Chicken Fajita Rice:

-In a bowl,add rice,water,wash thoroughly & soak for 1 hour then strain soaked rice & set aside.

-In a pot,add water & bring it to boil.

-Add pink salt & mix well.

-Add soaked rice,mix well & boil until 3/4th done (6-8 minutes) then strain & set aside.

-In a wok,add cooking oil,garlic & sauté for a minute.

-Add chicken & mix well until it changes color.

-Add tomato paste,chicken powder,mix well & cook on medium flame for 2-3 minutes.

-Add onion,yellow bell pepper,capsicum,red bell pepper,mix well & stir fry for 1-2 minutes.

-Add prepared fajita seasoning & mix well.

-Add boiled rice & mix well.

-Turn off the flame,add lemon juice & mix well.

Prepare Fire Roasted Salsa:

-On a stove,place grill rack & fire roast tomatoes,jalapenos,onion & garlic on direct flame until its charred from all sides.

-In a mortal & pestle,add roasted garlic,jalapeno,onion,fresh coriander,pink salt,black pepper crushed & crush well.

-Add roasted tomatoes & crush well.

-Add lemon juice & mix well.

-Serve chicken fajita rice with prepared salsa!
