Ingredients:
Prepare Fajita Seasoning:
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Himalayan pink salt 1 tsp or to taste
-Lehsan powder (Garlic powder) 1 & ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Cayenne powder ½ tsp
-Onion powder 1 & ½ tsp
-Dried oregano 1 & ½ tsp
-Paprika powder ½ tbs
Prepare Chicken Fajita Rice:
-Falak Extreme Basmati Rice 350g
-Water as required
-Water as required
-Himalayan pink salt 2 tsp or to taste
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Boneless chicken julienne 350g
-Tomato paste 2 tbs
-Chicken powder ½ tbs (optional)
-Pyaz (Onion) sliced 1 medium
-Yellow bell pepper julienne 1 medium
-Shimla mirch (Capsicum) julienne 1 medium
-Red bell pepper julienne 1 medium
-Lemon juice 1 tbs
Prepare Fire Roasted Salsa:
-Tamatar (Tomatoes) 2 large
-Jalapenos 2-3
-Pyaz (Onion) 1 medium
-Lehsan (Garlic) cloves 4-5
-Hara dhania (Fresh coriander) handful
-Himalayan pink salt ½ tsp or to taste
-Kali mirch (Black pepper) crushed ¼ tsp
-Lemon juice 2 tbs
Directions:
Prepare Fajita Seasoning:
-In a small jar,add red chilli powder,pink salt,garlic powder,black pepper powder,cumin powder,cayenne pepper,onion powder,dried oregano,paprika powder & shake well.Fajita seasoning is ready!
Prepare Chicken Fajita Rice:
-In a bowl,add rice,water,wash thoroughly & soak for 1 hour then strain soaked rice & set aside.
-In a pot,add water & bring it to boil.
-Add pink salt & mix well.
-Add soaked rice,mix well & boil until 3/4th done (6-8 minutes) then strain & set aside.

-In a wok,add cooking oil,garlic & sauté for a minute.
-Add chicken & mix well until it changes color.
-Add tomato paste,chicken powder,mix well & cook on medium flame for 2-3 minutes.
-Add onion,yellow bell pepper,capsicum,red bell pepper,mix well & stir fry for 1-2 minutes.
-Add prepared fajita seasoning & mix well.
-Add boiled rice & mix well.
-Turn off the flame,add lemon juice & mix well.
Prepare Fire Roasted Salsa:
-On a stove,place grill rack & fire roast tomatoes,jalapenos,onion & garlic on direct flame until its charred from all sides.
-In a mortal & pestle,add roasted garlic,jalapeno,onion,fresh coriander,pink salt,black pepper crushed & crush well.
-Add roasted tomatoes & crush well.
-Add lemon juice & mix well.
-Serve chicken fajita rice with prepared salsa!

-Small jar mein lal mirch powder,pink salt,lehsan powder,kali mirch powder,zeera powder,cayenne pepper,onion powder,dried oregano aur paprika powder dal ker ache tarhan shake ker lein.Fajita seasoning tayyar hai.
Prepare Chicken Fajita Rice:
-Bowl mein chawal aur pani dal ker thoroughly wash ker lein aur 1 hour kliya bhego dein phir soaked chawal ko strain ker lein & side per rakh dein.
-Pot mein pani dal ker ubal lein.
-Pink salt dal ker ache tarhan mix ker karein.
-Soaked chawal ker ache tarhan mix karein aur 3/4th done ho janay tak boil ker lein (6-8 minutes) phir strain ker ka side per rakh dein.
-Karahi mein cooking oil aur lehsan dal ker ek minute kliya sauté ker lein.
-Chicken dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Tomato paste aur chicken powder dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Pyaz,yellow bell pepper,Shimla mirch aur red bell pepper dal ker ache tarhan mix karein aur 1-2 minutes kliya stir fry ker lein.
-Tayyar fajita seasoning dal ker ache tarhan mix ker lein.
-Boiled chawal dal ker ache tarhan mix karein.
-Chulha bund ker dein aur lemon juice dal ker ache tarhan mix ker lein.
Prepare Fire Roasted Salsa:
-Chulhay per grill rack rakh dein,tamatar,jalapenos,pyaz aur lehsan ko direct flame per tamam sides sa charred ho janay tak paka lein.
-Mortal & pestle mein roasted lehsan,jalapeno,pyaz,hara dhania,pink salt aur kali mirch crushed dal ker ache tarhan crush ker lein.
-Roasted tamatar dal ker ache tarhan crush karein.
-Lemon juice dal ker ache tarhan mix ker lein.
-Chicken fajita rice ko tayyar salsa ka saath serve karein!
