Ingredients:
Prepare Pistachio Cream:
-Pista (Pistachios) boiled 100g
-White chocolate chopped 100g
-Makhan (Butter) melted 2 tbs
-Hot water 1/3 Cup
-Pistachio essence ½ tsp
-Green food color few drops
Prepare Cheesecake Layer:
-Whipping cream chilled 250ml
-Icing sugar 1/3 Cup
-Cream cheese 120g
-Green food color 2-3 drops or as required
Prepare Biscuits Base:
-Digestive biscuits 100g
-Makhan (Butter) melted 40g
Assembling:
-Rose buds
-Pista (Pistachios) sliced
Directions:
Prepare Pistachio Cream:
-In a blending jug,add pistachios,white chocolate,butter,hot water,pistachio essence,green food color & blend well until its smooth & creamy in texture.Pistachio cream is ready!
Prepare Cheesecake Layer:
-In a bowl,add whipping cream,icing sugar & beat until stiff peaks form.
-Reserve 1 Cup of whipped cream for garnishing & transfer to a piping bag.
-In remaining whipped cream,add prepared pistachio cream (1/2 cup),cream cheese,green food color & beat until well combined & transfer to a piping bag.
-Reserve remaining pistachio cream for layering & transfer to a piping bag.
Prepare Biscuits Base:
-In a chopper,add digestive biscuits & crush biscuits in food processor.
-Add melted butter & process until well combined.
Assembling:
-In an serving cup,add prepared crumbled biscuits & press firmly to set an even layer.
-Pipe out prepared cheesecake layer & prepared pistachio cream.
-Garnish with reserved whipped cream,rose buds,pistachios & serve chilled (makes 7-8).
