Ingredients:
-Baisan (Gram flour) 1 Cup
-Chawal ka atta (Rice flour) 2 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Baking soda ¼ tsp
-Zarda ka rang (Orange food color) ¼ tsp
-Ajwain (Carom seeds) ¼ tsp
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Water ½ Cup or as required
-Boiling water as required
-Himalayan pink salt 1 tsp
-Aloo (Potatoes) thick slices 3-4 medium
-Cooking oil for frying
-Podina (Mint leaves) dried & crushed 1 & ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Chaat masala 1 tsp
-Kali mirch powder (Black pepper powder) ¼ tsp
Directions:
-In a bowl,add gram flour,rice flour,cumin seeds,pink salt,red chilli powder,coriander seeds,baking soda, orange food color,carom seeds,fresh coriander,gradually add water & mix until well combined,cover & let it rest for 15-20 minutes.
-In boiling water,add pink salt & mix well.
-Add potatoes & mix well,cover & blanch for 2 minutes then strain & set aside.
-In a wok,heat cooking oil,dip blanched potatoes in prepared pakora batter & fry on medium flame until golden & crispy.
-In a small bowl,add mint leaves,red chilli crushed,chaat masala,black pepper powder & mix well.
-Sprinkle prepared spice mix on qatli pakora & toss well.
-Serve with chutney!

-Bowl mein baisan,chawal ka atta,zeera,pink salt,lal mirch powder,sabut dhania,baking soda,zarda ka rang,ajwain,hara dhania aur thora thora ker ka pani shamil karein aur ache tarhan whisk ker lein aur dhak ker 15-20 minutes kliya chor dein.
-Boiling water mein pink salt dal ker mix ker lein.
-Aloo dal ker ache tarhan mix kerin aur 2 minutes kliya blanch ker lein phir strain ker ka side per rakh dein.
-Karahi mein cooking oil garam karein aur blanched aloo ko tayyar pakora batter mein dip ker ka darmiyani ancch per golden & crispy ho janay tak fry ker lein.
-Chotay bowl mein podina,lal mirch crushed,chaat masala aur kali mirch powder dal ker ache tarhan mix ker lein.
-Qatli aloo per tayyar spice mix dal ker ache tarhan toss ker lein.
-Chutney ka saath serve karein!
