Ingredients:
Prepare Khushboo Garam Masala:
-Darchini (Cinnamon sticks) 2-3
-Sabut dhania (Coriander seeds) 1 tbs
-Badi elaichi (Black cardamom) 1
-Saunf (Fennel seeds) ½ tbs
-Sabut kali mirch (Black peppercorns) 1 tsp
-Javitri (Mace) 1 blade
-Tez patta (Bay leaves) 2
-Zeera (Cumin seeds) 1 tbs
-Lal mirch (Red chilli) crushed ½ tbs (optional)
-Hari elaichi (Green cardamom) 8-9
-Laung (Cloves) 3-4
-Jaifil (Nutmeg) ½ piece
-Dried rose petals 2 tbs
Prepare Mutton Qorma:
-Ghee (Clarified butter) ¼ Cup
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 7-8
-Laung (Cloves) 2-3
-Onion (Onion) sliced 1 medium
-Mutton mix boti 750g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Himalayan pink salt 1 & ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Dahi (Yogurt) whisked ½ Cup
-Water 1 & ½ Cup or as required
-Doodh (Milk) ¾ Cup
-Cream ½ Cup
-Kewra water 1 tsp
-Zafran (Saffron strands) ½ tsp
Prepare Rice:
-Water 3 litres
-Himalayan pink salt 1 & ½ tbs
-Sabut kali mirch (Black peppercorns) ½ tsp
-Zeera (Cumin seeds) 1 tsp
-Laung (Cloves) 2
-Chawal (Rice) 500g (soaked 1 hour)
Assembling:
-Zarda ka rang (Orange food color) ½ tsp
-Water 2 tbs
-Kewra water 1 tsp
-Ghee (Clarified Butter) 2 tbs
Directions:
Prepare Khushboo Garam Masala:
-In a spice grinder,add cinnamon sticks,coriander seeds,black cardamom,fennel seeds,black peppercorns, mace,bay leaves,cumin seeds,red chilli crushed,green cardamom,cloves,nutmeg,dried rose petals & grind well to make a powder.Khushboo Garam masala is ready!
Prepare Mutton Qorma:
-Set Dawlance multi cooker on DIY function at 140°C for 30 minutes.
-Add clarified butter & let it melt.
-Add cinnamon sticks,green cardamom,cloves,onion & fry until light golden.
-Add mutton,ginger garlic paste,mix well & cook for 6-8 minutes.
-Add prepared khushboo garam masala,pink salt,red chilli powder,mix well & cook for 1-2 minutes.
-Add yogurt & mix well.
-Add water,mix well & bring it to boil,cover & seal the multi cooker than set it on meat function & cook until meat is tender (30 minutes) (level 6).
-Release the pressure of multi cooker than open the lid.
-In a small bowl,add milk,cream,kewra water,saffron strands & mix well.
-Now add dissolved mixture in a multi cooker & mix well,takeout in a bowl & set aside.
Prepare Rice:
-Set Dawlance multi cooker on DIY function at 140°C for 30 minutes.
-In multi cooker,add water,pink salt,black peppercorns,cumin seeds,cloves,mix well & bring it to boil.
-Add rice & boil until 70% done (4 minutes),strain then rinse with tap water & set aside.
Assembling:
-In multi cooker,add mutton qorma,boiled rice,mutton qorma & boiled rice.
-In orange food color,add water & mix well.
-Now add dissolved food color,kewra water,clarified butter,cover & seal the multi cooker.
-Set Dawlance multi cooker on Rice setting at 140°C & steam cook for 20-25 minutes (Level 5).
-Mix well & serve with yogurt raita & salad!

-Spice grinder mein darchini,sabut dhania,badi elaichi,saunf,sabut kali mirch,jaifil,itez patta,zeera,lal mirch crushed,hari elaichi,laung,javitri aur dried rose petals dal dein aur grind ker ka powder tayyar ker lein.Khushboo Garam masala is ready!
Prepare Mutton Qorma:
-Dawlance multi cooker ko 140°C DIY function per 30 minutes kliya set ker lein.
-Ghee dal ker melt ker lein.
-Darchini,hari elaichi,laung aur pyaz dal dein aur light golden ho janay tak fry ker lein.
-Mutton aur adrak lehsan paste dal ker ache tarhan mix karein aur 6-8 minutes kliya paka lein.
-Tayyar khushboo garam masala,pink salt aur lal mirch powder dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Dahi dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhal dein aur multi cooker ko seal ker ka meat function per set ker lein aur gosht gul janay tak paka lein (30 minutes) (level 6).
-Multi cooker ka pressure release ker lein aur lid ko open ker lein.
-Chotay bowl mein doodh,cream,kewra water aur zafran dal ker ache tarhan mix ker lein.
-Dissolved mixture ko multi cooker mein dal ker ache tarhan mix karein aur bowl mein nikal lein & side per rakh dein.
Prepare Rice:
-Dawlance multi cooker ko 140°C DIY function per 30 minutes kliya set ker lein.
-Multi cooker mein pani,pink salt,sabut kali mirch,zeera aur laung aur pani dal ker ache tarhan mix karein aur ubal anay dein.
-Chawal dal dein aur 70% done ho janay tak boil ker lein (4 minutes) phir strain ker ka tap water sa rinse ker lein aur side per rakh dein.
Assembling:
-Multi cooker mein mutton qorma,boiled chawal,mutton qorma & boiled chawal dal dein.
-Zarda ka rang mein pani dal ker ache tarhan mix karein.
-Ab dissolved food color,kewra water aur ghee dal ker dhak dein aur multi cooker ko seal ker lein.
-Dawlance multi cooker ko Rice setting per 140°C per set ker lein aur 20-25 minutes kliya steam cook ker lein (level 5).
-Ache tarhan mix karein,dahi raita aur salad ka saath serve karein!
