Ingredients:
Prepare Mango Puree:
-Aam (Mango) chunks 1 Cup
-Sugar ¼ Cup or to taste
-Lemon juice 1 tbs
Assembling:
-Omore Mango Ice Cream
-Aam (Mango) chunks as required
-Pound cake slices as required
-Whipped cream
-Aam (Mango) chunks
-Cherries
-Podina (Mint leaves)
Directions:
Prepare Mango Puree:
-In a jug,add mango & blend well to make a puree.
-In a saucepan,add mango puree,sugar,lemon juice,mix well & cook on low flame until sugar is dissolved (3-4 minutes).
-Let it cool.
Assembling:
-Line rectangular cake loaf pan with aluminum foil.
-Add a layer of mango ice cream & spread evenly.
-Add mango chunks & press gently.
-Place pound cake & spread prepared mango puree on it.
-Add mango ice cream & spread evenly.
-Place pound cake,cover with cling film & seal properly.
-Let it freeze for 8-10 hours or overnight in freezer.
-Flip the cake pan & carefully remove the aluminum foil from the cake.
-Add & spread whipped cream all over the cake.
-Decorate with whipped cream,mango chunks,cherries & mint leaves.
-Cut into slices & serve!
