Ingredients:
-Dahi (Yogurt) 1 Cup
-Hari mirch (Green chilli) crushed 1 tbs
-Adrak lehsan (Ginger garlic) crushed 2 tbs
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Sabut dhania (Coriander seeds) crushed 2 tsp
-Himalayan pink salt 1 & ½ tsp or to taste
-Lemon juice 1 tbs
-Mutton mix boti 750g
-Pyaz (Onion) sliced 3-4 medium
-Hari mirch (Green chillies) 5-6
-Hari elaichi (Green cardamom) 2-3
-Javitri (Mace) 2 blades
-Kaju (Cashew nuts) 15-16
-Water 1 Cup
-Olper’s Cream ½ Cup (room temperature)
-Olper’s Milk ½ Cup
-Cooking oil ½ Cup
-Darchini (Cinnamon sticks) 2
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 3-4
-Hari elaichi (Green cardamom) 4-5
-Curry patta (Curry leaves) 10-12
-Tez patta (Bay leaf) 1
-Water 3 Cups
-Hari mirch (Green chillies) 3-4
-Adrak (Ginger) julienne 1-inch piece
-Garam masala powder ½ tsp
-Hara dhania (Fresh coriander) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped

Directions:
-In a bowl,add yogurt,green chilli,ginger garlic,cumin seeds,black pepper crushed,coriander seeds,pink salt,lemon juice & whisk well.
-Add mutton mix boti & mix well,cover with cling film & marinate for 1 hour in refrigerator.
-In a saucepan,add onion,green chillies,green cardamom,mace,cashew nuts,water & mix well,cover & cook on low flame for 10-12 minutes.
-Turn off the flame,blend well & set aside.
-In a bowl,add cream,milk,whisk well & set aside.
-In a wok,add cooking oil & heat it.
-Add cinnamon sticks,black cardamom,cloves,green cardamom,curry leaves,bay leaf & mix well.
-Add marinated mutton,mix well & cook on medium flame until oil separates (12-15 minutes).
-Add blended paste & mix well.
-Add water,mix well & bring it to boil,cover & cook on low flame until meat is tender (45-50 minutes).
-Add milk & cream mixture & mix well,cover & cook on low flame until oil separates (8-10 minutes).
-Add green chillies,ginger,garam masala powder,fresh coriander & mix well.
-Garnish with fresh coriander,ginger & serve!

-Bowl mein dahi,hari mirch,adrak lehsan,zeera,kali mirch crushed,sabut dhania,pink salt aur lemon juice dal ker ache tarhan whisk ker lein.
-Mutton mix boti dal ker ache tarhan mix karein aur cling film sa cover ker ke 1 hour kliya
refrigerator mein marinate ker lein.
-Saucepan mein pyaz,hari mirchein,hari elaichi,javitri,kaju aur pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 10-12 minutes kliya paka lein.
-Chulha bund ker dein aur ache tarhan blend ker ka side per rakh dein.
-Bowl mein cream aur doodh dal ker ache tarhan whisk ker lein & side per rakh dein.
-Karahi mein cooking oil dal ker garam karein.
-Darchini,badi elaichi,laung,hari elaichi,curry patta aur tez patta dal ker ache tarhan mix ker lein.
-Marinated mutton dal ker ache tarhan mix karein aur darmiyani ancch per oil alag ho janay tak paka lein (12-15 minutes).
-Blended paste dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gosht gul jay tak paka lein (45-50 minutes).
-Milk & cream mixture dal ker ache tarhan mix karein aur dhak ker halki ancch per oil alag ho jay tak paka lein (8-10 minutes).
-Hari mirchein,adrak,garam masala powder aur hara dhania dal ker mix ker lein.
-Hara dhania aur adrak sa garnish ker ka serve karein!
