Ingredients:
Prepare Chicken Filling:
-Cooking oil 3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Pyaz (Onion) chopped 1 medium
-Chicken qeema (Mince) 250g
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Himalayan pink salt ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Paprika powder 1 tsp
-Tomato paste 2 tbs
-Olper’s Mozzarella cheese 120-150g or as required
-Olper’s Cheddar cheese 100g or as required
-Hara dhania (Fresh coriander) chopped 1-2 tbs
Prepare Dough:
-Warm water ¾ Cup
-Sugar 1 & ½ tsp
-Khameer (Instant yeast) 2 & ½ tsp
-Anda (Egg) 1
-Cooking oil 2 tbs
-Himalayan pink salt 1 tsp
-Maida (All-purpose flour) sifted 3 & ½ Cups
-Cooking oil 1 tsp
-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 2 tbs
-Makhan (Butter) melted 1 tbs
-Til (Sesame seeds) as required
-Makhan (Butter) melted
-Fresh parsley chopped
Directions:
Prepare Chicken Filling:
-In a frying pan,add cooking oil,garlic,onion & mix well.
-Add chicken mince & mix well until it changes color.
-Add red chilli powder,pink salt,black pepper powder,cumin powder,paprika powder,tomato paste,mix well & cook on medium flame for 4-5 minutes & set aside.
-Let it cool.
-Add mozzarella cheese,cheddar cheese,fresh coriander,mix well & set aside.
Prepare Dough:
-In a bowl,add warm water,sugar,instant yeast & mix well,cover & let it proof for 5 minutes.
-Add egg,cooking oil,pink salt & whisk well.
-Add all-purpose flour,mix well & knead until dough is formed.
-Grease with cooking oil,cover & let it proof for 1 hour at warm place.
-Sprinkle dry flour & knead dough until smooth.
-Take a small dough (70g) & make a ball,sprinkle dry flour & spread it with the help of hands.
-Add 2 tbs of prepared chicken filling,apply water,gather all the edges,pinch & seal to make a ball.
-Place all stuffed buns in a greased dish,cover with kitchen cloth & let it proof for 15 minutes.
-In a small bowl,add egg yolk,milk,butter & whisk well.
-Apply on the buns & sprinkle sesame seeds (makes 11-12).
-Bake in preheated oven at 180C for 10 minutes (on lower grill) & 10 minutes (on both grills).
-After baking,brush melted butter,sprinkle fresh parsley & serve!
