Ingredients:
For Sheera (Sugar syrup):
- Paani (Water) 1 Cup
- Cheeni (Sugar) 2 Cups
- Hari elaichi (Green cardamom) 3-4
- Lemon juice 1 tsp
For Dough:
- Maida (All-purpose flour) 1 Cup
- Safed Aata (White flour) 1 Cup
- Namak (Salt) ½ tsp
- Oil ¼ Cup
- Pani (Water) warm for kneading
- Desi ghee (for brushing)
- Desi ghee for frying
- Cream for garnishing
Directions:
For Sheera (Sugar syrup):
In pot,add water,sugar and green cardamom,mix and cook until syrup thickens.
Add lemon juice,stir well and set aside.
For Dough:
In bowl,add all-purpose flour,white flour,salt,oil and mix.
Gradually add warm water and knead until smooth dough is formed.
Cover and leave it for 20 minutes.
Take a dough and make 4 small balls and coat in dry wheat flour.
Press each ball a little between your palms to give a shape, coat it with dry flour.
Roll out dough into round shape with the help of rolling pin and set aside.
Repeat this process and roll out 3 more doughs into round shape.
Spread desi ghee evenly over entire surface and dust flour,place another round dough, spread desi ghee and dust flour,repeat this process 2 times more.
With the help of cutter,cut the entire dough into strips (about 1 inch) and roll it like a swiss roll,now place this roll over the another strip and roll it again like a swiss roll and stick outer end,coat it with dry wheat flour.
Repeat this process and prepare remaining rolls.
Now again coat it with dry wheat flour and roll it gently with the help of rolling pin and give it a round shape.
In wok heat desi ghee and fry round dough until golden brown color.
After frying, immediately put the fried mehboobi in the sugar syrup.The sugar syrup should be slightly warm when you add mehboobi in it.
Turn over after a minute so that both sides are coated with the syrup.
Keep them in the sugar syrup for about 2 minutes.
Remove mehboobi with the help of tong and shake lightly so that excess sugar syrup.
Mehboobi is ready to serve,garnish with cream.

Lemon juice dal ker ache tarhan mix ker lein aur side per rakh dein.

Bowl mein maida,safed aata,namak aur oil dal ker mix ker lein.
Thora thora ker ka neem garam pani dal ker aata ghond lein aur smooth dough tayyar ker lein.
Dhak ker 20 minutes kliya rakh dein.
Dough ki 4 small balls bana lein aur aata mein coat ker lein.
Dough ko haath ki madad sa pheela lein aur sukha atta mein coat ker lein.
Rolling pin ki madad sa roti bail lein aur side per rakh dein.
Yehe process dubara karein,3 aur rotiyan bail lein.
Desi ghee laga ker upper sa maida chirak dein,ek aur dough is k upper rakh k desi ghee lagayein aur maida chirak dein,yehe process 2 dafa aur karein.
Cutter ki madad sa puri dough ko strips (about 1 inch) ki shakal mein cut ker lein aur swiss roll ki tarhan roll karein,dosri strip k upper roll rakh k phr sa swiss roll ki tarhan roll karein aur end ko stick ker dein,dry wheat flour mein coat ker lein.
Yehe process dubara karein aur tamam rolls tayyar ker lein.
Ab dubara dry wheat flour mein coat karein aur rolling pin ki madad sa round shape mein bail lein.
Karhai mein desi ghee garam karein aur round dough ko golden brown color hunay tak fry ker lein.
Frying k foran bad fried mehboobi ko sugar syrup mein dal dein.Sugar syrup halka garam huna chahiya.
Sugar syrup mein mehboobi ko turn ker lein ta k dono sides sa syrup coat ho jaye.
Sugar syrup mein 2 minutes kliya chor dein.
Tong ki madad sa mehboobi ko syrup sa nikal lein aur halka sa shake karein ta k ezafee sugar syrup nikla jaye.
Mehboobi tayyar hai,cream sa garnish karein.
