Ingredients:
Prepare Chicken Kofta:
-Boneless chicken cubes 500g
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Hari mirch (Green chillies) 3-4
-Himalayan pink salt 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Pyaz (Onion) fried 3 tbs
-Dhania powder (Coriander powder) 1 tsp
-Bread slice 1 large
-Hara dhania (Fresh coriander) 2-3 tbs
-Boiling water as required
Prepare Makhni Gravy:
-Tamatar (Tomatoes) 3 medium
-Pyaz (Onion) 2 medium
-Water ½ Cup
-Tomato paste 2 tbs
-Cooking oil 3 tbs
-Nurpur Butter salted 50g
-Hari mirch (Green chilli) paste 1 tbs
-Adrak lesan paste (Ginger garlic paste) 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Garam masala powder ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Chicken powder ½ tbs Substitute: Chicken cube 1
-Water ½ Cup or as required
-Cream 1/3 Cup
-Coconut milk powder 2 tbs
-Kasuri meethi (Dried fenugreek leaves) 1 tsp
-Hara dhania (Fresh coriander) chopped
-Cream
-Nurpur Butter salted
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Chicken Kofta:
-In a chopper,add chicken,ginger garlic paste,green chillies,pink salt,red chilli powder,cumin powder,fried onion,coriander powder,bread slice,fresh coriander & chop until well combined.
-Grease hands with oil,take mixture (45g) & make meatballs of equal sizes (makes 14-15).
-In a steamer pot,add water & bring it to boil.
-Place steamer grill & prepared chicken koftay,cover & steam cook on medium low flame for 8-10 minutes & set aside.
Prepare Makhni Gravy:
-In a wok,add tomatoes,onion,water & bring it to boil,cover & steam cook on low flame for 6-8 minutes.
-Turn off the flame & remove tomato peel.
-Let it cool.
-In a blender jug,add blanched tomato & onion,tomato paste & blend well.
-In the same wok,add cooking oil,butter & let it melt.
-Add green chilli paste & mix well.
-Add blended paste,ginger garlic paste,pink salt,white pepper powder,garam masala powder,black pepper powder,coriander seeds,mix well & cook on medium flame for 2-3 minutes.
-Add chicken powder & mix well,cover & cook on low flame until oil separates (3-4 minutes).
-Add water & mix well.
-Turn off the flame,add cream,coconut milk powder & mix well.
-Turn on the flame,add steamed chicken koftay & mix gently.
-Add dried fenugreek leaves,fresh coriander,cover & cook on low flame for 4-5 minutes.
-Garnish with cream,butter,fresh coriander & serve!

-Haathon ko oil sa grease karein aur mixture (45g) la ker ek jaisay sizes ka koftay tayyar ker lein (makes 14-15).
-Steamer pot mein pani dal ker ubal lein.
-Streamer grill rakh ker tayyar chicken koftay rakh dein aur dhak ker darmiyani halki ancch per 8-10 minutes kliya paka lein & side per rakh dein.
Prepare Makhni Gravy:
-Karahi mein tamatar,pyaz aur pani dal ker ubal lein aur dhak ker halki ancch per 6-8 minutes kliya steam cook ker lein.
-Chulha bund ker dein aur tomato peel ko remove ker lein.
-Thanda ker lein.
-Bender jug mein blanched tomato & onion aur tomato paste dal ker ache tarhan blend ker lein.
-Us he karahi mein cooking oil aur makhan dal ker melt ker lein.
-Hari mirch paste dal ker ache tarhan mix karein.
-Blended paste,adrak lehsan paste,pink salt,safed mirch powder,garam masala powder,kali mirch powder aur sabut dhania dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Chicken powder dal ker ache tarhan mix karein aur dhak ker halki ancch per oil alag ho janay tak paka lein (3-4 minutes).
-Pani dal ker ache tarhan mix karein.
-Chulha bund ker dein,cream aur coconut milk powder dal ker ache tarhan mix ker lein.
-Chulha on karein aur steamed chicken koftay dal ker gently mix ker lein.
-Kasuri meethi aur hara dhania dal ker dhak dein aur halki ancch per 4-5 minutes kliya paka lein.
-Cream,makhan aur hara dhania sa garnish ker ka serve karein!
