Ingredients:
Prepare Chapli Kabab Mixture:
-Beef qeema (Mince) 400g with 10% fat
-Himalayan pink salt ½ tsp or to taste
-Pyaz (Onion) grated & squeezed 2 medium
-Tamatar (Tomato) deseeded & finely chopped 1 medium
-Hari mirch (Green chilli) paste 1 tbs
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Kali mirch (Black pepper) crushed ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 & ½ tsp
-Lal mirch (Red chilli) crushed 1 tbs
-Ajwain (Carom seeds) ¼ tsp
-Makai ka atta (Maize flour) ½ Cup
-Anardana (Dried pomegranate seeds) crushed 1 tbs
-Anda (Egg) 1
Prepare Masala Filling:
-Baisan (Gram flour) roasted ½ tbs
-Chaat masala 1 tbs
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Himalayan pink salt ¼ tsp or to taste
-Amchor powder (Dried mango powder) 1 tsp
-Lemon juice 3 tbs
-Hari mirch (Green chillies) 14-15
-Cooking oil for frying
Directions:
Prepare Chapli Kabab Mixture:
-In a dish,add beef mince,pink salt,mix & mash well with the help of your palm for 3-4 minutes or until smooth.
-Add onion,tomatoes,green chilli paste,coriander seeds,black pepper crushed,cumin seeds,red chilli crushed,carom seeds,maize flour,dried pomegranate seeds,gradually add whisked egg & mix until well combined.
Prepare Masala Filling:
-In a bowl,add gram flour,chaat masala,coriander seeds,red chilli powder,pink salt,dried mango powder, lemon juice & mix well.
-Deseed green chillies & stuffed with 1 tsp of prepared masala filling.
-Take small quantity of chapli kabab mixture & flatten it on your palm,place stuffed green chilli in the center & coat evenly.
-Smoothen it with wet hands to ensure there are no cracks (makes 14-15).
-In a wok,heat cooking oil & fry on medium low flame until golden brown.
