Ingredients:
Prepare Pink Yogurt Sauce:
-Water 2 Cups
-Chuqandar (Beetroot) diced ½ Cup (2 medium)
-Lehsan (Garlic) cloves 2-3
-Hari mirch (Green chillies) 2-3
-Dahi (Yogurt) whisked 1 Cup
-Zeera powder (Cumin powder) 1 tsp
-Kala namak (Black salt) ½ tsp
-Himalayan pink salt ½ tsp or to taste
Prepare Green Chutney:
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Hari mirch (Green chillies) 4-5
-Lehsan (Garlic) cloves 3-4
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Chaat masala 1 tsp
-Lemon juice 3 tbs
-Ice cubes 5-6
-Water 2-3 tbs
Assembling:
-Chanay (Chickpeas) boiled 1 & ½ Cup
-Kheera (Cucumber) chopped 1 Cup
-Pyaz (Onion) chopped 1 Cup
-Tamatar (Tomato) deseeded & chopped 1 Cup
-Hara dhania (Fresh coriander) chopped handful
-Chaat masala to taste
-Lal mirch (Red chilli) crushed to taste
-Himalayan Pink salt to taste
-Dahi (Yogurt) whisked
-Phool makhanay (Lotus seeds) roasted
-Badam (Almonds) halved
-Kaju (Cashew nuts)
-Kaddu ke beej (Pumpkin seeds)
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Pink Yogurt Sauce:
-In a saucepan,add water & bring it to boil.
-Add beetroot & boil on medium flame for 6-8 minutes then strain & let it cool.
-In a blender jug,add boiled beetroot,garlic,green chillies,yogurt,cumin powder,black salt,pink salt,blend well & set aside.
Prepare Green Chutney:
-In a blender jug,add fresh coriander,mint leaves,green chillies,garlic,cumin seeds,pink salt,chaat masala, lemon juice,ice cubes,water,blend well & set aside.
Assembling:
-In a bowl,add chickpeas,cucumber,onion,tomato,fresh coriander,chaat masala,red chilli crushed,pink salt,mix well & set aside.
-In a serving plate,spread prepared pink yogurt sauce,prepared green chutney,yogurt & add prepared chickpea & vegetable chaat.
-Add lotus seeds,almonds,cashew nuts,pumpkin seeds,yogurt,prepared green chutney,prepared pink yogurt sauce,lotus seeds,garnish with fresh coriander & serve!
