Ingredients:
Prepare Cheese Filling:
-Makhan (Butter) 3 tbs
-Maida (All-purpose flour) 3-4 tbs
-Olper’s Milk 1 Cup
-Chilli garlic sauce 1 tbs
-Hot sauce 1 tbs
-Dried oregano 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Five spice powder ½ tsp
-Pickled jalapenos chopped ¼ Cup
-Fresh parsley chopped 1 tbs
-Olper’s Cheddar cheese ½ Cup or as required
-Olper’s Mozzarella cheese ½ Cup or as required
Prepare Dough:
-Maida (All-purpose flour) sifted 3 Cups
-Himalayan pink salt 1 tsp or to taste
-Cooking oil 2 tbs
-Water 1 Cup or as required
-Cooking oil 1 tsp
-Cooking oil for frying
Directions:
Prepare Cheese Filling:
-In a frying pan,add butter & let it melt.
-Add all-purpose flour,mix well & cook for a minute.
-Add milk,whisk well properly to avoid lumps & cook until it thickens.
-Add chilli garlic sauce,hot sauce,dried oregano,black pepper crushed,pink salt,five spice powder,pickled jalapenos,fresh parsley,mix well & cook on low flame until it leaves the sides of the pot (2-3 minutes).
-Turn off the flame,add cheddar cheese,mozzarella cheese,mix well & set aside.
Prepare Sambousek:
-In a bowl,add all-purpose flour,pink salt,cooking oil & mix well until it crumbles.
-Gradually add water,mix well & knead until hard dough is formed.
-Grease with cooking oil,cover with cling film & let it rest for 10 minutes.
-Take a small portion,sprinkle dry flour & roll out the dough into a thin sheet.
-Cut circles with a 4 inch round dough cutter & place it on samosa mold.
-Add prepared cheese filling in the center of dough,apply water on the edges & press to seal properly (makes 35-36).
-Can be stored in an airtight container for up to 1 month in freezer.
-In a wok,heat cooking oil (150°C) & fry on low flame until golden & crispy.
-Serve with tomato ketchup!
