Ingredients:
-Baisan (Gram flour) sifted 4 Cups
-Himalayan pink salt 1 tsp or to taste
-Zeera (cumin seeds) roasted & crushed ¼ tsp
-Ajwain (Carom seeds) ¼ tsp
-Baking soda ½ tsp
-Water 2 & ¼ Cups or as required
-Cooking oil 2 tbs
-Cooking oil for frying
-Hot water as required
Prepare Meethi Dahi Phulki:
-Dahi (Yogurt) 2 Cups
-Sugar powdered ¼ Cup
-Himalayan pink salt 1 pinch or to taste
-Water ¼ Cup or as required
-Chaat masala to taste
-Papri
Directions:
-In a bowl,add gram flour,pink salt,cumin seeds,carom seeds,baking soda,gradually add water & whisk until thick consistency & continue whisking for 8-10 minutes or until batter is fluffy.
-Add cooking oil & whisk until well combined.
-In a wok,heat cooking oil & fry on low flame until golden.
-Take out & let it rest for 10 minutes.
-Fry again until they are crispy & golden brown.
-Let them cool completely.
How to Store Phulkiyan:
-You can store fried phulkiyan in a zip lock bag for up to 3 months in freezer or 2 weeks in refrigerator.
-In a bowl,add hot water,fried phulki,cover & let them soak until soft then take out from water and squeeze gently to remove excess water & set aside.
How to Use Stored Phulkiyan:
-Soak refrigerated phulki in lukewarm water until soft.
-Soak frozen phulki in hot water until soft.
Prepare Meethi Dahi Phulki:
-In a bowl,add yogurt,sugar,pink salt,water & whisk well until smooth.
-In a serving dish,add soaked phulki,prepared meethi dahi,sprinkle chaat masala,garnish with papri & serve!

-Cooking oil dal ker ache tarhan whisk ker lein.
-Karahi mein cooking oil garam karein aur halki ancch per golden ho janay tak fry ker lein.
-Bahir nikal lein aur 10 minutes kliya chor dein.
-Crispy & golden-brown ho janay tak dubara fry ker lein.
-Thanda ker lein.

-Zip lock bag mein dal ker 3 months kliya freezer or 2 weeks kliya refrigerator mein store ker saktay han.
-Bowl mein garam pani aur fried phulki dal ker dhak dein aur soft ho janay tak soak ker lein phir nikal ker excess water ko squeeze ker lein & side per rakh dein.

-Refrigerated phulki ko neem garam pani mein soft ho janay tak soak ker lein.
-Frozen phulki ko garam pani mein soft ho janay tak soak ker lein.

-Bowl mein dahi,cheeni,pink salt aur pani dal ker smooth ho janat tak ache tarhan whisk ker lein.
-Serving dish mein soaked phulki,tayyar meethi dahi & chaat masala dal dein aur papri sa garnish ker ka serve karein.
