Ingredients:
Prepare Fusion Chapli Seekhab:
-Beef qeema (Mince) 500g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Pyaz (Onion) grated & squeezed 2 medium
-Tamatar (Tomato) chopped 1 medium
-Hara dhania (Fresh coriander) chopped 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Anardana (Dried pomegranate seeds) crushed 1 & ½ tbs
-Ajwain (Carom seeds) ¼ tsp
-Garam masala powder ½ tsp
-Lal mirch (Red chilli) crushed 1 tbs
-Makai ka atta (Maize flour) 4-5 tbs
-Water 1 tbs
-Cooking oil 2-3 tbs
Prepare Khatti Green Chutney:
-Imli pulp (Tamarind pulp) 3-4 tbs
-Chanay (Roasted gram) 2 tbs
-Lehsan (Garlic) cloves 3-4
-Hari mirch (Green chillies) 3-4
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Himalayan pink salt ¼ tsp or to taste
Assembling:
-Maida (All-purpose flour) 1 & ½ tbs
-Water 3 tbs
-Roll sheet as required
-Tamatar (Tomato) deseeded & sliced
-Pyaz (Onion) sliced
-Cooking oil for frying
Directions:
Prepare Fusion Chapli Seekhab:
-In a bowl,add beef mince,ginger garlic paste,green chilli,onion,tomato,fresh coriander,pink salt, coriander seeds,cumin seeds,black pepper powder,dried pomegranate seeds,carom seeds,garam masala powder,red chilli crushed,maize flour & mix until well combined.
-Add water & mix well.
-Grease hands with oil,take small quantity (60g) of mixture & make kabab of equal sizes.
-In a frying pan,add cooking oil & shallow fry kababs on low flame from all sides until done.
-Can be stored in an airtight container for up to 1 month in freezer.
Prepare Khatti Green Chutney:
-In a blender jug,add tamarind pulp,roasted gram,garlic,green chillies,fresh coriander,mint leaves, pink salt,blend well & set aside.
-In a bowl,add all-purpose flour,water & mix well.Flour slurry is ready!
Assembling:
-On a roll sheet,place fusion seekhkab,prepared khatti green chutney,tomato,onion,roll up & apply flour slurry (makes 14).
-In a wok,heat cooking oil (Temp: 150°C) & fry rolls on medium flame until golden & crispy.
-Serve with tomato ketchup!
