Recipe in English:
Ingredients:
-Gajar (Carrots) washed & peeled 2 kg
-Ghee (Clarified butter) 3-4 tbs
-Doodh (Milk) 2 & ½ Cups
-Sugar 1 & ½ Cup or to taste
-Ghee (Clarified butter) ½ Cup
-Badam (Almonds) sliced 3 tbs
-Pista (Pistachios) sliced 3 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Khoya crumbled as required
-Badam (Almonds) sliced
-Pista (Pistachios) sliced
-Chandi warq (Edible silver leaves)
Directions:
-Grate carrots with the help of the grater & set aside.
-In a wok,add clarified butter & let it melt.
-Add grated carrots,mix well,cover & cook on medium flame for 5-6 minutes then cook until moisture dries up (10-12 minutes).
-Spread carrots on a large tray & let it cool completely.
-Can be stored in a zip lock bag for up to 6 months in freezer.
How to make Gajar Halwa from Frozen Carrots:
-Take out zip lock bag from freezer & thaw it at room temperature.
-In a wok,add carrots,milk & mix well,bring it to boil & cook on medium flame until milk is reduced (8-10 minutes).
-Add sugar,mix well & cook on medium flame for 8-10 minutes.
-In a saucepan,add clarified butter & let it melt.
-Add almonds,pistachios & fry on low flame for 2-3 minutes.
-In a wok,add fried nuts with ghee & mix well.
-Add cardamom powder & mix well.
-Add khoya.
-Garnish with khoya,almonds,pistachios,edible silver leaves & serve!
