Ingredients:
-Hari elaichi (Green cardamom) 9-10
-Darchini (Cinnamon sticks) 2-3
-Jau ka dalia (Barley porridge) broken 1 kg
-Doodh (Milk) 2 Cups
-Darchini powder (Cinnamon powder)
-Honey
-Khajoor (Dates) chopped
-Badam (Almonds) chopped
-Water 2 Cups
-Himalayan pink salt to taste
-Cooked chicken 2-3 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a wok,add green cardamom,cinnamon sticks & sauté for a minute.
-Add barley porridge,mix well & dry roast on low flame for 12-15 minutes
-Let it cool.
-In a grinder,add roasted barley & grind well to make fine powder then sift through mesh strainer.
-Can be stored in an airtight jar for up to 3 months (yield: 1 kg).
Method to Prepare:
-Dissolve or cook 2 tbs of Homemade Talbina mix in 1 Cup of milk/water.
Option # 1: How to make Sweet Talbina with Homemade Talbina Mix:
-In a saucepae,add milk,homemade Talbina mix 4 tbs & whisk well.
-Turn on the flame & cook on low flame until it thickens (6-8 minutes).
-In a serving bowl,ad prepared talbina,sprinkle cinnamon powder & garnish with honey,dates & almonds.

Option # 2: How to make Savoury Talbina with Homemade Talbina Mix:
-In a saucepan,add water,4 tbs of prepared talbina mix & whisk well.
-Turn on the flame,add pink salt,mix well & cook on medium flame until it thickens (6-8 minutes).
-Take out in a serving bowl.
-Add cooked chicken,fresh coriander & serve!

For Sweet Talbina:
-Top it up with dates,dry fruits & honey.
For Savoury Talbina:
-Top it up with chicken or vebetables or lentils & herbs.
