Ingredients:
Prepare Orange Glaze:
-Orange juice 1 & ½ Cup
-Sugar 3-4 tbs
-Adrak (Ginger) julienne 1 inch piece
-Orange peel julienne 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Himalayan pink salt 1 pinch or to taste
-Cornflour 2 tsp or as required
Prepare Crispy Beef & Veg Filling:
-Cooking oil 2-3 tbs
-Boneless beef strips 350g (undercut)
-Lehsan (Garlic) finely chopped 1 tbs
-Adrak (Ginger) julienne 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Paprika powder 1 tsp
-Mustard paste 1 & ½ tsp
-Soy sauce 2 tbs
-Pyaz (Onion) sliced ½ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Gajar (Carrot) julienne ½ Cup
-Corn kernels boiled ½ Cup
-Maida (All-purpose flour) 1 tbs
-Water 2 tbs
-Spring roll sheets as required
-Cooking oil 3-4 tbs
Directions:
Prepare Orange Glaze:
-In a saucepan,add orange juice,sugar,ginger,orange peel,red chilli crushed,pink salt,cornflour & mix well.
-Turn on the flame & cook on low flame until it thickens (3-4 minutes) & set aside.
Prepare Crispy Beef & Veg Filling:
-In a wok,add cooking oil,beef & mix well until it changes color then cook on high flame until it dries up (5-6 minutes).
-Add garlic,ginger & mix well.
-Add pink salt,black pepper powder,paprika powder,mustard paste,soy sauce,mix well & cook for 1-2 minutes.
-Add onion,capsicum,carrot,corn kernels,2 tbs of prepared orange glaze,mix well & cook on high flame for a minute & let it cool.
-In all-purpose flour,add water & whisk well.Flour slurry is ready.
-Take spring roll sheet,add prepared crispy beef & veg filling,fold over the sides,roll up & apply all-purpose flour slurry.
-Prepare the remaining rolls similarly (makes 10-12).
-Can be stored in an airtight container for up to 1 month in freezer.
-In frying pan,add cooking oil & shallow fry rolls from all sides until golden brown.
-Apply prepared orange glaze on fried rolls & serve with orange glaze!

-Chulha on karein aur halki ancch per garha ho janay tak paka lein (3-4 minutes) & side per rakh dein.

-Karahi mein cooking oil aur beef dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein phir tez ancch per sukh janay tak paka lein (5-6 minutes).
-Lehsan aur adrak dal ker ache tarhan mix ker lein.
-Pink salt,kali mirch powder,paprika powder,mustard paste aur soy sauce dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Pyaz,shimla mirch,gajar,corn kernels aur 2 tbs tayyar orange glaze dal ker ache tarhan mix karein aur yez ancch per ek minute kliya paka lein & thanda ker lein.
-Maida mein pani dal ker ache tarhan whisk ker lein.Flour slurry tayyar hai.
-Spring roll sheet per tayyar crispy beef & veg filling dal ker sides ko fold ker lein aur flour slurry laga ker roll bana lein.
-Is he tarhan baqi rolls bhi tayyar ker lein (makes 10-12).
-Airtight container mein dal ker 1-month kliya freezer mein store ker saktay han.
-Frying pan mein cooking oil dal dein aur rolls ko tamam sides sa golden-brown ho janay tak shallow fry ker lein.
-Fried rolls per tayyar orange glaze laga lein & serve karein!
