Ingredients:
Prepare Palak Cheese Kabab:
-Boiling water as required
-Palak (Spinach) 300g
-Chilled water
-Broccoli florets 300g
-Aloo (Potatoes) boiled 3 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Zeera powder (Cumin powder) 1 & ½ tsp
-Lal mirch (Red chilli) crushed 2 tsp
-Hari mirch (Green chilli) chopped 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Breadcrumbs 3-4 tbs
-Lemon juice 1 tbs
-Mozzarella cheese grated as required
-Cooking oil 3-4 tbs
Prepare Masala Rice:
-Cooking oil 2-3 tbs
-Pyaz (Onion) sliced 1 medium
-Haldi powder (Turmeric powder) ½ tsp
-Chicken powder ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Himalayan pink salt ¼ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Dahi (Yogurt) whisked 2 tbs
-Chawal (Rice) basmati boiled 2 Cups
Directions:
Prepare Palak Cheese Kabab:
-In boiling water,add spinach & blanch on low flame for 3 minutes.
-Take out in a bowl of chilled water & let it rest for few minutes.
-In the same boiling water,add broccoli & blanch for 5 minutes.
-Take out in the same bowl of chilled water & let it rest for few minutes then strain,chop roughly & set aside.
-In a bowl,add potatoes & mash well with the help of masher.
-Add spinach & broccoli mixture,ginger garlic paste,cumin powder,red chilli crushed,green chilli,pink salt,breadcrumbs,lemon juice & mix until well combined.
-With the help of greased hands,take a small quantity of mixture & spread on your palm.
-Add mozzarella cheese & make kababs of the equal sizes.
-In a frying pan,heat cooking oil & fry kababs on medium flame on both sides until golden brown. (makes 10).
Prepare Masala Rice:
-In a wok,add cooking oil & heat it.
-Add onion & fry until light golden.
-Add turmeric powder,chicken powder,red chilli powder,pink salt,black pepper powder,cumin powder,yogurt,mix well & cook on medium flame for 2 minutes.
-Add boiled rice & give it a good mix.
-Serve masala rice with palak cheese kabab,salad & yogurt raita.

-Boiling water mein palak dal ker halki ancch per 3 minutes kliya blanch ker lein.
-Chilled water bowl mein nikal lein aur thori dair kliya rest dein.
-Us he boiling water mein broccoli dal dein aur 5 minutes kliya blanch ker lein.
-Chilled water bowl mein nikal lein aur thori dair kliya rest dein phir strain karein aur roughly chop ker ka side per rakh dein.
-Bowl mein aloo dal ker masher ki madad sa ache tarhan mash ker lein.
-Spinach & broccoli mixture,adrak lehsan paste,zeera powder,lal mirch crushed,hari mirch, pink salt,breadcrumbs aur lemon juice dal ker ache tarhan mix ker lein.
-Greased hands ki madad sa mixture ki small quantity lein aur palm per pheela lein.
-Mozzarella cheese dal dein aur ek jaisay sizes ka kabab tayyar ker lein.
-Frying pan mein cooking oil garam karein aur darmiyani ancch per dono sides sa golden brown ho janay tak fry ker lein (makes 10).
Prepare Masala Rice:
-Karahi mein cooking oil garam karein.
-Pyaz dal dein aur light golden ho janay tak fry ker lein.
-Haldi powder,chicken powder,lal mirch powder,pink salt,kali mirch powder,zeera powder aur dahi dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
-Boiled chawal dal ker ache tarhan mix ker lein.
-Masala rice ko palak cheese kabab,salad & yogurt raita ka saath serve karein!
