Ingredients:
Prepare Dough:
-Safed atta (White flour) sifted 2 Cups
-Baisan (Gram flour) 1 Cup
-Himalayan pink salt 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Ghee (Clarified butter) 2 tbs
-Warm water ¾ Cup or as required
Prepare Spice Mix:
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Ajwain (Carom seeds) 1 tsp
-Chaat masala 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
Prepare Green Herb Mix:
-Methi (Fresh fenugreek leaves) roughly chopped 1 & ½ Cup
-Soya (Dill) chopped ½ Cup
-Podina (Mint leaves) chopped ½ Cup
-Hara dhania (Fresh coriander) chopped ½ Cup
-Lehsan (Garlic) chopped ½ tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Ghee (Clarified butter) 1 tbs or as required
Directions:
Prepare Dough:
-In a bowl,add white flour,gram flour,pink salt,turmeric powder & mix well.
-Add clarified butter & mix well.
-Gradually add warm water,mix well & knead until dough is formed,cover & let it rest for 20 minutes.
Prepare Spice Mix:
-In a bottle,add coriander seeds,pink salt,carom seeds,chaat masala,cumin seeds,red chilli powder & cover,shake well & set aside.
Prepare Green Herb Mix:
-In a bowl,add fresh fenugreek leaves,dill,mint leaves,fresh coriander,garlic & green chillies,mix well & set aside.
-Knead dough until smooth.
-Take a small dough (80g),sprinkle dry flour & roll out with the help of rolling pin.
-Take another rolled dough,sprinkle dried spice mix,add prepared green herb mix,sprinkle dried spice mix & cover with another rolled dough.
-Press gently to seal the edges & roll out with rolling pin.
-Cut 1-inch-thick strips with the help of the cutter & roll them like a pinwheel.
-Sprinkle dry flour & roll out with the help of rolling pin.
-On a heated griddle,add clarified butter,let it melt & fry paratha on medium flame from both sides until golden & crispy (makes 4).

-Ghee dal ker ache tarhan mix karein.
-Thora thora ker ka neem garam pani dal ker ache tarhan mix karein aur ghond ker dough tayyar ker lein aur dhak ker 20 minutes kliya chor dein.
Prepare Spice Mix:
-Bottle mein sabut dhania,pink salt,ajwain,chaat masala,zeera aur lal mirch powder dal ker cover ker lein aur ache tarhan shake ker ka side per rakh dein.
Prepare Green Herb Mix:
-Bowl mein methi,soya,podina,hara dhania,lehsan & mirchein dal ker ache tarhan mix ker lein & side per rakh dein.
-Dough ko smooth ho janya tak dubara ghond lein.
-Chota dough (80g) lein aur maida chirak ker rolling pin ki madad sa bail lein.
-Ek aur dough bail lein,dried spice mix,tayyar green herb mix aur dried spice mix dal ker dosray rolled dough sa cover ker lein.
-Edges ko gently press ker ka seal ker lein aur rolling pin sa bail lein.
-Cutter ki madad sa 1-inch-thick strips mein cut ker lein aur pinwheel ki tarhan roll ker lein.
-Atta chirak dein aur rolling pin ki madad sa bail lein.
-Garam tawa per ghee dal ker melt ker lein aur paratha ko darmiyani ancch per dono sides sa golden & crispy ho janay tak fry ker lein (makes 4).
