Ingredients:
Prepare Pakoray:
-Baisan (Gram flour) sifted 2 Cups
-Aloo (Potatoes) small cubes 2 medium
-Band gobhi (Cabbage) shredded ½ Cup
-Pyaz (Onion) sliced 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Baking soda ¼ tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Haldi powder (Turmeric powder) 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Water ½ or as required
-Cooking oil for frying
Prepare Curry (Salan):
-Pyaz (Onion) 2 medium
-Tamatar (Tomatoes) 3 medium
-Hari mirch (Green chillies) 3-4
-Hara dhania (Fresh coriander) handful
-Water ½ Cup or as required
-Cooking oil ¼ Cup
-Ajwain (Carom seeds) ¼ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Dahi (Yogurt) whisked 3-4 tbs
-Water 2 Cups or as required
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chillies) 2
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Pakoray:
-In a bowl,add gram flour,potatoes,cabbage,onion,ginger garlic paste,green chilli,salt,cumin seeds, red chili powder,baking soda,coriander seeds,turmeric powder,fresh coriander,water & mix well,cover & let it rest for 5 minutes.
-In a wok,heat cooking oil & fry pakoray on medium flame until golden & crispy.
Prepare Curry (Salan):
-In a blender jug,add onion,tomatoes,green chillies,fresh coriander,water & blend well.
-In a pot,add cooking oil,carom seeds & mix well.
-Add blended paste & cook on medium flame for 4-5 minutes.
-Add ginger garlic paste,salt,red chilli powder,cumin powder,turmeric powder,garam masala powder, yogurt,mix well & cook until oil separates (10-12 minutes).
-Add water,mix well & bring it to boil,cover & cook on low flame for 12-15 minutes.
-Add pakoray & mix gently.
-Add fresh coriander,green chillies & simmer for few minutes.
-Garnish with fresh coriander & serve!

-Bowl mein baisan,aloo,bund gobhi,pyaz,adrak lehsan paste,hari mirch,namak,zeera,lalmirch powder,baking soda,sabut dhania,haldi powder,hara dhania aur pani dal ker ache tarhan mix ker lein aur dhak ker 5 minute kliya chor dein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein.
Prepare Curry (Salan):
-Blender jug mein pyaz,tamatar,hari mirchein,hara dhania aur pani dal ker ache tarhan blend ker lein.
-Pot mein cooking oil aur ajwain dal ker mix karein.
-Blended paste dal dein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Adrak lehsan paste,namak,lal mirch powder,zeera powder,haldi powder,garam masala powder aur dahi dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (10-12 minutes).
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 12-15 minutes kliya paka lein.
-Pakoray dal ker gently mix ker lein.
-Hara dhania aur hari mirchein dal ker halki ancch per few minutes kliya paka lein.
-Hara dhania sa garnish ker ka serve karein!
