Ingredients:
Prepare Bread:
-Maida (All-purpose flour) sifted 3 Cups
-Baking soda ½ tsp
-Khameer (Instant yeast) 2 tsp
-Namak (Salt) ½ tsp
-Sugar 1 tsp
-Warm water ¾ Cup or as required
-Cooking oil 1 tbs
-Cooking oil 1 tsp
Prepare Chicken Filling:
-Cooking oil 1 tbs
-Boneless chicken large pieces ½ kg
-Water 2 Cups
-Dark soy sauce 1 tbs
-Light soy sauce 1 & ½ tbs
-Lehsan (Garlic) crushed 1 tsp
-Adrak (Ginger) crushed 1 tsp
-Badiyan ka phool (Star anise) 1
-Tez patta (Bay leaves) 2-3 small
-Darchini (Cinnamon stick) 1 large
-Sichuan peppercorns 1 tsp
-Namak (Salt) ¼ tsp or to taste
-Misri (Rock sugar) 2 pieces
-Hara pyaz (Spring onion) leaves ½ Cup
-Jalapeno 1
-Hara pyaz (Spring onion) leaves 1 stalk
-Hara dhania (Fresh coriander) 1-2 tbs
Directions:
Prepare Bread:
-In a bowl,add all-purpose flour,baking soda,instant yeast,salt,sugar & mix well.
-Gradually add warm water,cooking oil & mix well.
-Add remaining warm water,mix well & knead until dough is formed.
-Grease with cooking oil,cover & let it rest for 1 hour (warm place).
-Knead dough until smooth,take a small dough (100g) & make a ball,cover & let it rest for 15 minutes.
-Grease hands with oil,press gently & roll out with the help of rolling pin (5-inches).
-Grease griddle with oil,place pita,cover & cook on low flame until light golden (3-4 minutes each side).
Prepare Chicken Filling:
-In a saucepan,add cooking oil,chicken & mix well until it changes color.
-Add water,dark soy sauce,light soy sauce,garlic,ginger,star anise,bay leaves,cinnamon stick,Sichuan peppercorns,salt,rock sugar,spring onion leaves,mix well & bring it to boil,cover & cook on low flame until chicken is tender (15-20 minutes) & cook until ½ cup water is left.
-Let it cool.
-On a clean cutting board,chop jalapeno,spring onion leaves & fresh coriander.
-Place 2 to 3 cooked chicken pieces & roughly chops everything altogether.
-Add 1-2 tbs of remaining stock & chop well.
-Cut bread from center making a pocket & stuffed with prepared filling.
-Add 1 tbs of remaining chicken stock on filling & serve (makes 5-6)!

-Thora thora ker ka neem garam pani aur cooking oil dal ker ache tarhan mix karein.
-Remaining neem garam pani dal ker ache tarhan mix karein aur gjond ker dough tayyar ker lein.
-Cooking oil sa grease karein aur dhak ker 1 hour garam jagha per rakh dein.
-Dough ko smooth ho janay tak dubara ghond lein aur ball (100g) bana lein,dhak dein aur 15 minutes kliya chor dein.
-Haathon ko oil sa grease karein,gently press karein aur rolling pin ki madad sa bail lein (5-inches).
-Tawa ko oil sa grease karein,pita rakh ker dhak dein aur halki ancch per light golden ho janay tak paka lein (3-4 minutes each side).
Prepare Chicken Filling:
-Saucepan mein cooking oil aur chicken dal dein aur color change ho janay tak ache tarhan mix ker lein.
-Pani,dark soy sauce,light soy sauce,lehsan,adrak,badiyan ka phool,tez patta,darchini,Sichuan peppercorns,namak,misri aur hara pyaz leaves dal ker ache tarhan mix karein aur ubal anay dein aur halki ancch per chicken gul janay aur ½ cup pani reh janay tak paka lein.
-Thanda ker lein.
-Clean cutting board per jalapeno,hara pyaz leaves aur hara dhania ko chop ker lein.
-2 to 3 cooked chicken pieces ko sab cheezeon ka saath roughly chop ker lein.
-1-2 tbs remaining stock dal ker ache tarhan chop karein.
-Bread ko center mein sa cut ker ka pocket bana lein aur tayyar filling bhar dein.
-1 tbs remaining chicken stock ko filling per dal ker serva karein (makes 5-6)!
