Ingredients:
Prepare Creamy Spinach Filling:
-Akhrot (Walnuts) chopped ¼ Cup
-Palak (Spinach) leaves 200g
-Cooking oil 1 tbs
-Makhan (Butter) 1 tbs
-Lehsan (Garlic) grated 1 tsp
-Maida (All-purpose flour) 1 tbs
-Olper’s Milk ½ Cup
-Olper’s Cream ¼ Cup (room temperature)
-Lal mirch (Red chilli) crushed ¼ tsp
-Namak (Salt) ¼ tsp or to taste
-Kali mirch powder (Black pepper powder) ¼ tsp
-Onion powder ¼ tsp
-Puff pastry 500g
-Anday ki zardi (Egg yolk) 1
-Water 1 tsp
-Til (Sesame seeds) black/white as required
-Olper’s Mozzarella cheese grated as required
Directions:
Prepare Creamy Spinach Filling:
-In a frying pan,add walnuts & dry roast for 2-3 minutes & set it aside.
-Chop spinach leaves with the help of knife & set aside.
-In the same frying pan,add cooking oil,chopped spinach,mix well & sauté until spinach is wilted (4-5 minutes) & set it aside.
-In the same frying pan,add butter & let it melt.
-Add garlic & mix well.
-Add all-purpose flour & mix well for a minute.
-Add milk,cream,whisk well & cook until it thickens.
-Add red chilli crushed,salt,black pepper powder,onion powder & mix well.
-Add roasted walnuts,sauteed spinach & mix until well combined.
-Let it cool.
-On a clean working surface,sprinkle dry flour,place puff pastry & roll out with the help of rolling pin.
-Cut the shapes of pastry with the help of the cutter (3 inch).
-Take another smaller cutter (2.5 inch) of that particular shape,place in the center of cut puff pastries & cut the rings of particular shapes.
-Now place the pastries on a baking tray lined with butter paper.
-In egg yolk,add water,whisk well & brush it on puff pastries.
-Now place the smaller shape pastries on them & gently press to seal,brush egg yolk mixture & sprinkle sesame seeds.
-Bake in preheated oven at 180C for 20 minutes (on both grills).
-Takeout from the oven & gently press down center part of the baked pastry with the help of spoon.
-Add prepared spinach filling in the center of pastries & mozzarella cheese.
-Bake in preheated oven at 140C until cheese melts (on top grill).
-Serve with tomato ketchup (makes 6-8)!

-Doodh aur cream dal ker ache tarhan whisk karein aur garha ho janay tak paka lein.
-Lal mirch crushed,namak,kali mirch powder aur onion powder dal ker ache tarhan mix ker lein.
-Roasted akhrot aur sauteed palak dal ker ache tarhan mix ker lein.
-Thanda ker lein.
-Clean working surface per maida chirak dein aur puff pastry rakh ker rolling pin ki madad sa bail lein.
-Cutter ki madad sa pastry ki shapes cut ker lein (3 inch).
-Dosray small cutter (2.5 inch) ki madad sa particular shape mein cut ker lein
-Pastries ko baking paper lined with butter paper per rakh dein.
-Anday ki zardi mein pani dal ker ache tarhan whisk Karin aur pastries per laga lein.
-Small shape pastries ko us ka upper rakh dein aur gently press ker ka seal ker lein,egg yolk mixture laga ker til chirak dein.
-Preheated oven mein 180C per 20 minutes kliya bake ker lein (on both grills).
-Oven sa nikal lein aur spoon ki madad sa baked pastry ka center part ko press down ker lein.
-Tayyar spinach filling & mozzarella cheese ko pastries ka center mein dal dein.
-Preheated oven mein 140C per cheese melt ho janay tak bake ker lein (on top grill).
-Tomato ketchup ka saath serve karein (makes 6-8)!
