Ingredients:
Prepare BBQ Boti:
-Chicken fillet 750g
-Baking soda 1 tsp
-Zeera (Cumin seeds) ½ tbs
-Javitri (Mace) 1 piece
-Jaifil (Nutmeg) ¼ piece
-Darchini (Cinnamon sticks) 1-2
-Sabut dhania (Coriander seeds) ½ tbs
-Sabut kali mirch (Black peppercorns) 10-12
-Khashkhash (Poppy seeds) washed 1 & ½ tbs Substitute: Almonds 6-8
-Namak (Salt) ½ tbs or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
-Zarda ka rang (Orange food color) ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Dahi (Yogurt) whisked 4 tbs
-Lemon juice 1-2 tbs
-Cooking oil 2-3 tbs
-Makhan (Butter) melted 2 tbs
-Chaat masala 1 tsp
-Lemon juice 1 tbs
-Koyla (Charcoal) for smoke
Prepare Puri Paratha:
-Namak (Salt) 1 tsp or to taste
-Milk powder 2 tbs
-Sugar powdered 2 tbs
-Ghee (Clarified butter) melted 2 tbs
-Water 1 Cup or as required
-Fine atta (Fine flour) sifted 3 Cups
-Cooking oil 1 tbs
-Cooking oil for frying
-Raita
-Pyaz (Onion) rings
-Lemon slices
Directions:
Prepare BBQ Boti:
-Cut chicken into thin strips.
-In a bowl,add chicken,baking powder & mix well,cover & marinate for 10 minutes.
-In a frying pan,add cumin seeds,mace,nutmeg,cinnamon sticks,coriander seeds,black peppercorns, poppy seeds & dry roast until fragrant (2-3 minutes).
-Let it cool.
-In a spice mixer,add roasted spices & grind well.
-Add salt,turmeric powder,red chilli powder,orange food color,grind well & set aside.
-Add ginger garlic paste,yogurt,ground spices,lemon juice & mix well then skew on metal skewers.
-On a griddle,add cooking oil & cook on medium flame from all sides until done (4-5 minutes each side) & apply oil in between.
-Remove bbq chicken boti from skewers in a bowl,add butter,chaat masala,lemon juice & toss well.
-Give coal smoke for 2 minutes.
Prepare Puri Paratha:
-In a bowl,add salt,milk powder,sugar,clarified butter,water & whisk well.
-Add fine flour,mix well & knead until dough is formed,cover & let it rest for 10 minutes.
-Grease hands with cooking oil & knead dough for 2 minutes.
-Take a small dough (150g),make a ball,add cooking oil & spread the dough with the help of hands & prick the dough with the help of fork.
-In a wok,heat cooking oil & fry puri paratha on high flame until golden (makes 5).
-On puri paratha,add bbq chicken boti,raita,onion rings,lemon slices & serve!

-Bowl mein chicken aur baking powder dal ker ache tarhan mix karein aur dhak ker 10 minutes kliya marinate ker lein.
-Frying pan mein zeera,javitri,jaifil,darchini,sabut dhania,sabut kali mirch aur khashkhash dal ker khushbu ajanay tak dry roast ker lein (2-3 minutes).
-Thanda ker lein.
-Spice mixer mein roasted spices dal ker ache tarhan grind ker lein.
-Nmak,haldi powder,lal mirch powder aur zarda ka rang dal ker ache tarhan grind ker lein & side per rakh dein.
-Adrak lehsan paste,dahi,ground spices aur lemon juice dal ker ache tarhan mix karein aur metal skewers per laga lein.
-Tawa per cooking oil dal dein aur darmiyani ancch per tamam sides sa paka lein (4-5 minutes each side) & bech bech mein oil laga lein.
-Bbq chicken boti ko skewers sa bowl mein nikal lein,makhan,chaat masala aur lemon juice dal ker ache tarhan toss ker lein.
-2 minutes kliya koyla ka dhuwan dein.
Prepare Puri Paratha:
-Bowl mein namak,milk powder,cheeni,ghee aur pani dal ker ache tarhan whisk ker lein.
-Fina atta dal ker ache tarhan mix karein aur ghond ker dough tayyar ker lein aur dhak ker 10 minutes kliya chor dein.
-Haathon ko oil sa grease karei aur dough ko 2 minutes kliya knead ker lein.
-Chota dough lein (150g) aur ball bana lein,cooking oil dal dein aur dough ko haath ki madad sa pheela lein aur fork sa prick ker lein.
-Karahi mein cooking oil garam karein aur tez ancch per puri paratha ko golden ho janay tak fry ker lein (makes 5).
-Puri paratha per bbq chicken boti,,raita,pyaz rings & lemon slices dal ker serve karein!
