Ingredients:
-Aam (Mango) chunks 2 Cups
-Sugar 2 tbs
-Taza doodh (Fresh milk) 1 & ½ litre
-Sugar 5 tbs or to taste
-Elaichi powder (Cardamom powder) 1 tsp
-Olper’s Milk ¼ Cup
-Custard powder vanilla flavor 1 tbs
-Olper’s Cream 200ml
-Yellow food color few drops (optional)
-Mixed nuts sliced
-Aam (Mango) cubes
-Mixed nuts
Directions:
-In a blender jug,add mango and blend to make a puree (approx. 1 Cup).
-In a saucepan,add mango puree,sugar,mix well & cook on low flame until it thickens.
-Let it cool & set aside.
-In a large wok,add fresh milk & bring it to boil,cook on low flame & keep sticking balai (cream) on the sides of the wok until one third of milk is reduced.
-Add sugar,cardamom powder,mix well & cook on medium flame for 4-5 minutes.
-In a small bowl,add milk,custard powder & whisk well.
-Now add dissolved custard in a wok,mix well & cook for 2-3 minutes.
-Add cooked puree,cream & whisk well.
-Add yellow food color,whisk well & scrap balai (cream) from the sides of the wok,mix gently & cook on medium flame for 2-3 minutes.
-Add mixed nuts & let it cool.
-Garnish with mango,mixed nuts & serve chilled!
