Ingredients:
Prepare Beef Tikka Boti:
-Boneless beef preferably undercut ½ kg
-Dahi (Yogurt) ¼ Cup
-Kacha papita (Raw papaya) paste 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) paste 1 tbs
-Lemon juice 2 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 2 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder 1 tsp
-Namak (Salt) 1 tsp or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Zeera powder (Cumin powder) ½ tsp
-Olper’s Tarrka Desi Ghee 2 tbs
-Hara dhania (Fresh coriander) chopped 1 tsp
-Koyla (Charcoal) for smoke
-Rolled dough
-Olper’s Tarrka Desi ghee ½ tbs
-Olper’s Tarrka Desi ghee 1-2 tbs
Praper Mayo Sauce:
-Dahi (Yogurt) ½ Cup
-Mayonnaise ¼ Cup
-Tomato ketchup ¼ Cup
-Lehsan paste (Garlic paste) 1 tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Namak (Salt) ¼ tsp or to taste
Assembling:
-Pyaz (Onion) rings
-Green chutney
Directions:
Prepare Beef Tikka Boti:
-Pound beef with the help of meat mallet.
-In a bowl,add beef,yogurt,raw papaya paste,ginger garlic paste,green chilli paste,lemon juice, Kashmiri red chilli powder,turmeric powder,coriander powder,red chilli powder,garam masala powder,salt,red chilli crushed,cumin powder & mix well,cover & marinate for 1 hour.
-In a frying pan,add desi ghee & let it melt.
-Add marinated beef,mix well & cook on medium flame for 8-10 minutes,cover & cook on low flame until meat is tender (30-35 minutes).
-Add fresh coriander,mix well & cook on high flame until it dries up.
-Give coal smoke for 2 minutes.
-Take a dough ball (100g),sprinkle dry flour & roll out with the help of rolling pin.
-Add & spread desi ghee,cut the dough from the center and roll out one edge,twist and again make a dough.
-Press gently,sprinkle dry flour & roll out with the help of rolling pin.
-On heated griddle,place paratha & fry from both sides with desi ghee.
Mayo Sauce:
-In a bowl,add yogurt,mayonnaise,tomato ketchup,garlic paste,red chilli powder,cumin seeds,salt, whisk well & transfer to a squeeze bottle.
Assembling:
-On a paratha,spread mayo sauce,cooked beef cubes,onion rings,green chutney,mayo sauce,warp in butter paper & serve (makes 4-5).

-Beef ko meat mallet ki madad sa pound ker lein.
-Bowl mein beef,dahi,kacha papita paste,adrak lehsan paste,hari mirch paste,lemon juice,Kashmiri lal mirch powder,haldi powder,dhania powder,lal mirch powder,garam masala powder,namak,lal mirch crushed aur zeera powder dal ker ache tarhan mix karein aur dhak ker 1 hour kliya marinate ker lein.
-Frying pan mein deis ghee dal ker melt ker lein.
-Marinated beef dal ker ache tarhan mix karein aur darmiyani ancch per 8-10 minutes kliya paka lein aur dhak ker halki ancch per gosht gul janay tak paka lein (30-35 minutes).
-Hara dhania dal ker ache tarhan mix karein aur tez ancch per sukh janay tak paka lein.
-2 minute kliya koyla ka dhuwan dein.
-Dough ball (100g) mein aur atta chirak ker rolling pin ki madad sa bail lein.
-Desi ghee dal ketr pheela lein aur dough ko center sa cut ker lein aur ek edge ko roll ker lein,twist karein aur dubara dough bana lein.
-Gently press karein aur atta chirak ker rolling pin ki madad sa bail lein.
-Garam tawa per paratha rakh dein aur desi ghee dal ker dono sides sa fry ker lein.
Mayo Sauce:
-Bowl mein dahi,mayonnaise,tomato ketchup,lehsan paste,lal mirch powder,zeera powder aur namak dal ker ache tarhan whisk ker lein aur squeeze bottle mein transfer ker lein.
Assembling:
-Paratha per mayo sauce,cooked beef cubes,pyaz rings,hari chutney aur mayo sauce dal ker butter paper mein warp ker ka serve karein (makes 4-5).
