Ingredients:
Prepare Qeema:
-Beef qeema (Mince) ½ kg
-Pyaz (Onion) sliced 2 medium
-Tamatar (Tomatoes) finely chopped 4 medium
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 & ½ tsp
-Dahi (Yogurt) whisked ½ Cup
-Haldi powder (Turmeric powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmir red chilli) powder 1 & ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Garam masala powder ½ tsp
-Water 1 & ½ Cup or as required
-Cooking oil ½ Cup
-Hari mirch (Green chillies) sliced 7-8
-Hara dhania (Fresh coriander) chopped 2 tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped
-Lal mirch (Red chilli) sliced
Prepare Kachori:
-Maida (All-purpose flour) sifted 3 Cups
-Kalonji (Nigella seeds) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Ghee (Clarified butter) 2 tbs
-Lukewarm water 1 Cup or as required
-Cooking oil for frying
Directions:
Prepare Qeema:
-In a wok,add beef mince,onion,tomatoes,ginger garlic paste,green chilli paste,yogurt,turmeric powder,salt,kashmiri red chilli powder,red chilli powder,garam masala powder,mix well & marinate for 15 minutes.
-Turn on the flame,add water & mix well,cover & cook on medium flame for 20-25 minutes then cook on high flame until it dries up (4-5 minutes).
-In the center of the wok,add cooking oil,green chillies,fresh coriander & sauté for a minute then mix well & cook for 2-3 minutes.
-Add fresh coriander,cover & cook on low flame until oil separates (2-3 minutes).
-Garnish with fresh coriander,red chilli & serve!
Prepare Kachori:
-In a bowl,add all-purpose flour,nigella seeds,salt & mix well.
-Add clarified butter & mix well until it crumbles.
-Gradually add lukewarm water,mix well & knead until dough is formed,cover & let it rest for 20 minutes.
-Transfer the dough to a clean working surface & knead dough until smooth.
-Take a small dough (60g),make a ball,grease with cooking oil & roll out with the help of rolling pin.
-In a wok,heat cooking & fry kachori on medium flame until golden & crispy (makes 12-13).

-Karahi mein beef qeema,pyaz,tamatar,adrak lehsan paste,hari mirch paste,dahi,haldi powder, namak,Kashmiri lal mirch powder,lal mirch powder aur garam masala powder dal ker ache tarhan mix karein aur 15 minutes kliya marinate ker lein.
-Chulha on karein,pani dal ker ache tarhan mix karein aur dhak ker darmiyani ancch per 20-25 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein (4-5 minutes).
-Karahi ka bech mein cooking oil,hari mirchein aur hara dhania dal ker ek minute kliya sauté ker lein phir ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Hara dhania dal ker dhak dein aur halki ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Hara dhania aur lal mirch sa garnish ker ka serve karein!
Prepare Kachori:
-Bowl mein maida,kalonji aur namak dal ker ache tarhan mix karein.
-Ghee dal dein aur crumble ho janay tak ache tarhan mix ker lein.
-Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 20 minutes kliya rest dein.
-Dough ko clean working surface per dal ker smooth hunay tak dubara ghond lein.
-Chota dough (60g) la ker ball bana lein,cooking oil sa grease karein aur rolling pin ki madad sa bail lein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein (makes 12-13).
