Ingredients:
Prepare Spice Mix:
-Tandoori masala 1 & ½ tbs
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Chaat masala ½ tbs
-Sabut dhania (Coriander seeds) roasted & crushed 2 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
Prepare Chatkhara Kabab:
-Boneless chicken cubes 600g
-Pyaz (Onion) fried ½ Cup
-Bread slice 1 large
-Hari mirch (Green chillies) 4-5
-Lehsan (Garlic) crushed ½ tbs
-Adrak (Ginger) crushed ½ tbs
-Anda (Egg) 1
-Tandoori masala 1 tbs
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
-Cooking oil 1 tsp
-Cooking oil for frying
Prepare BBQ Chutney:
-Hara dhania (Fresh coriander) 1 Cup
-Podina (Mint leaves) ½ Cup
-Hari mirch (Green chillies) 5-6
-Lehsan (Garlic) 2 cloves
-Namak (Salt) ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Kala namak (Black salt) ½ tsp
-Imli pulp (Tamarind pulp) ½ Cup
-Water ¼ Cup or as required
Directions:
Prepare Spice Mix:
-In a bowl,add tandoori masala,cumin seeds,red chilli crushed,chaat masala,coriander seeds,red chilli powder,salt & mix well.Spice mix is ready!
Prepare Chatkhara Kabab:
-In a chopper,add chicken,fried onion,bread slice,green chillies,garlic,ginger,egg & chop well.
-Take out in a bowl,add tandoori masala,cumin seeds,red chilli crushed,salt,turmeric powder,fresh coriander,mint leaves,cooking oil & mix well.
-Grease hands with oil,take a small quantity of mixture (60g) & make a kababs of equal sizes.
-On a clean surface,sprinkle prepared spice mix & coat kabab from all sides.
-Can be stored in an airtight container for up to 1 month in freezer.
-In a frying pan,heat cooking oil & fry kabab from both sides until golden brown (makes 15).
Prepare BBQ Chutney:
-In a blender jug,add fresh coriander,mint leaves,green chillies,garlic,salt,cumin seeds,black salt, tamarind pulp,water & blend well.
-Serve chatkhara kabab with BBQ chutney!

-Bowl mein tandoori masala,zeera,lal mirch crushed,chaat masala,sabut dhania,lal mirch powder aur namak dal ker ache tarhan mix ker lein.Spice mix tayyar hai.
Prepare Chatkhara Kabab:
-Chopper mein chicken,fried pyaz,bread slice,hari mirchein,lehsan,adrak aur anda dal ker ache tarhan chop ker lein.
-Bowl mein nikal lein,tandoori masala,zeera,lal mirch crushed,namak,haldi powder,hara dhania,podina aur cooking oil dal ker ache tarhan mix ker lein.
-Haathon ko oil sa grease karein,mixture ki small quantity (60g) lein aur ek jaisay sizes ka kabab tayyar ker lein.
-Clean working surface per tayyar spice mix pheela lein aur kabab ko tamam sides sa coat ker lein.
-Airtight container mein dal ker 1-month kliya freezer mein store ker saktay han.
-Frying pan mein cooking oil garam karein aur kabab ko dono sides sa golden-brown ho janay tak fry ker lein (makes 15).
Prepare BBQ Chutney:
-Blender jug mein hara dhania,podina,hari mirchein,lehsan,namak,zeera,kala namak,imli pulp aur pani dal ker ache tarhan blend ker lein.
-Chatkhara kabab ko BBQ chutney ka saath serve karein!
