Ingredients:

Crispy Beguni:

-Baisan (Gram flour) sifted 2 Cups

-Lal mirch powder (Red chilli powder) ½ tbs or to taste

-Zeera powder (Cumin powder) 1 tsp

-Baking soda ½ tsp

-Lal mirch (Red chilli) crushed ½ tsp

-Namak (Salt) 1 tsp or to taste

-Ajwain (Carom seeds) 1 pinch

-Zarda ka rang (Orange food color) 1 pinch

-Adrak lehsan paste (Ginger garlic paste) 1 tsp

-Water 1 Cup or as required

-Hara dhania (Fresh coriander) chopped 2-3 tbs

-Baingan (Eggplant) round 3-4

-Cooking oil for frying

-Chaat masala

Bengan Rollup Pakora:

-Chicken mince (Qeema) 200g

-Tamatar (Tomato) deseeded & chopped ½ Cup

-Pyaz (Onion) finely chopped ½ Cup

-Lemon juice 1 tbs

-Sabut dhania (Coriander seeds) crushed 1 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Namak (Salt) ½ tsp or to taste

-Zeera (Cumin seeds) crushed ½ tbs

-Hara dhania (Fresh coriander) chopped 2 tbs

-Baisan (Gram flour) sifted 1 Cup or as required

-Namak (Salt) ½ tsp or to taste

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Ajwain (Carom seeds) ¼ tsp

-Water 1 Cup or as required

-Baingan (Eggplant) long 2-3

-Cooking oil for frying

-Chaat masala

 

Directions:

Crispy Beguni:

-In a bowl,add gram flour,red chilli powder,cumin powder,baking soda,red chilli crushed,salt,carom seeds,orange food color,ginger garlic paste,gradually add water & whisk well.

-Add fresh coriander,whisk well & set aside.

-Cut eggplant into slices.

-In a wok,heat cooking oil,dip eggplant slices in pakora batter & fry on low flame until golden.

-Sprinkle chaat masala & serve with chutney!

Bengan Rollup Pakora:

-In a bowl,add chicken mince,tomato,onion,lemon juice,coriander seeds,red chilli powder,salt,cumin seeds,fresh coriander & mix well.

-In a bowl,add gram flour,salt,red chilli powder,carom seeds,gradually add water & whisk well.

-Remove brinjal head & tail then make thin slices of eggplant with the help of peeler.

-On a thin slice of eggplant,add prepared mince filling & roll up.

-In a wok,heat cooking oil,dip roll ups in pakora batter & fry on low flame until golden brown.

-Sprinkle chaat masala & serve with chutney!
