Ingredients:
Prepare Chicken Filling:
- Adrak lehsan paste (Ginger garlic paste) 1 tbs
- Lemon juice 2 tbs
- Tandoori masala 1 & ½ tbs
- Chicken fillet 300g
- Cooking oil 2 tbs
- Makhan (Butter) 2 tbs
- Pyaz (Onion) chopped 1 large
- Lehsan (Garlic) crushed 1 tsp
- Hari mirch (Green chillies) chopped 2
- Maida (All-purpose flour) 2 tbs
- Doodh (Milk) ½ Cup
- Cream ½ Cup
- Lal mirch (Red chilli) crushed 1 tsp
- Namak (Salt) 1 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Paprika powder ½ tsp
- Soy sauce 1 tbs
- Hara dhania (Fresh coriander) chopped 2 tbs
Prepare Samosa Dough:
- Maida (All-purpose flour) sifted 2 & ½ Cups
- Namak (Salt) 1 tsp
- Ajwain (Carom seeds) 1 tsp
- Ghee (Clarified butter) 3 tbs
- Water ½ Cup or as required
- Cooking oil 1 tsp
- Cooking oil for frying
Directions:
Prepare Chicken Filling:
In a bowl,add ginger garlic paste,lemon juice,tandoori masala & mix well.
Add chicken fillet & mix well,cover & marinate for 15 minutes.
In a frying pan,add cooking oil,marinated fillet,apply remaining marinade & cook on medium flame from both sides for 3-4 minutes,cover & cook on low flame for 6-8 minutes then cook on high flame until it dries up.
Let it cool then shred with the help of fork & set aside.
In the same frying pan,add butter & let it melt.
Add onion,mix well & sauté until translucent.
Add green chillies & mix well.
Add garlic & mix well.
Add all-purpose flour,mix well & cook for a minute.
Add milk,mix well & cook until it thickens.
Turn off the flame,add cream & mix well.
Turn on the flame,add red chilli crushed,salt,cumin seeds,paprika powder,soy sauce,fresh coriander, mix well & cook on low flame for 1-2 minutes.
Now add shredded chicken,mix well & cook for 2-3 minutes.
Let it cool.
Prepare Samosa Dough:
In a bowl,add all-purpose flour,salt,carom seeds & mix well.
Add clarified butter & mix well until it crumbles.
Gradually add water & knead until smooth dough is formed.
Grease with cooking oil,cover & let it rest for 30 minutes.
Sprinkle dry flour,take a small dough (110g),make a ball,sprinkle dry flour & roll out with the help of rolling pin (12 inches).
Divide rolled dough in 8 triangles & make cuts on the pointed side of each triangle & apply water with the help of the brush.
Place prepared chicken filling (1 tbs) at one side of triangle,join two corners & press gently to seal the joint & flip the cut side to make a samosa,press & seal the edges.
Can be stored in freezer for up to 1 month.
In a wok,heat cooking oil & fry on medium low flame until golden (makes 16).
Serve with chutney & tomato ketchup!

Chicken fillet dal ker ache tarhan mix karein aur dhak ker 15 minutes kliya marinate ker lein.
Frying pan mein cooking oil,marinated chicken aur remaining marinade dal dein aur darmiyani ancch per dono sides sa 3-4 minutes kliya paka lein aur dhak halki ancch per 6-8 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
Thanda ker lein phir fork ki madad sa shred ker lein & side per rakh dein.
Us he frying pan mein makhan dal ker melt ker lein.
Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
Hari mirch dal ker ache tarhan mix karein.
Lehsan dal ker ache tarhan mix ker lein.
Maida dal ker ache tarhan mix karein aur ek minute kliya paka lein.
Doodh dal ker mix karein aur garha ho janay tak paka lein.
Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
Chulha on karein,lal mirch crushed,namak,zeera,paprika powder soy sauce aur hara dhania dal ker ache tarhan mix karein aur halki ancch per 1-2 minutes kliya paka lein.
Ab shredded chicken dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Thanda ker lein.
Prepare Samosa Dough:
Bowl mein maida,namak aur ajwain dal ker ache tarhan mix ker lein.
Ghee dal dein aur crumble ho janay tak ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
Cooking oil sa grease karein aur dhak ker 30 minutes kliya rest dein.
Maida chirak dein,chota dough (110g) lein aur ball bana lein,maida chirak dein aur rolling pin ki madad sa bail lein (12 inches).
Rolled dough ko 8 triangles mein divide ker lein,triangle ki pointed side per cuts laga ker brush ki madad sa bali laga lein.
Triangle ki ek side per tayyar chicken filling (1 tbs) dal ker two corners ko join ker lein aur press ker ka seal ker lein phir cut sides ko flip ker ka samosa tayyar ler lein aur edges ko seal ker lein.
1 month kliya freezer mein store ker saktay han.
Karahi mein cooking oil garam karein aur darmiyani halki ancch per golden ho janay tak fry ker lein (makes 16).
Chutney & tomato ketchup ka saath serve karein!
