Ingredients:
Prepare Koftay (Meatballs):
-Beef qeema (Mince) lean ½ kg
-Pyaz (Onion) grated & squeezed ½ Cup
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Garam masala powder ½ tsp
-Bread slices 2 (soaked in water)
Prepare Curry:
-Badiyan ka phool (Star anise) 1
-Hari elaichi (Green cardamom) 2
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon sticks) 2
-Laung (Cloves) 3-4
-Zeera (Cumin seeds) 1 & ½ tsp
-Pyaz (Onion) 1-2 large
-Tamatar (Tomato) 1-2 large
-Adrak (Ginger) 2-inch piece
-Lehsan (Garlic) 8-10 cloves
-Water ¼ Cup or as required
-Ghee (Clarified butter) ½ Cup or as required
-Zeera (Cumin seeds) ½ tsp
-Kashmiri Lal mirch (Kashmiri red chilli) powder 1
-Namak (Salt) 1 tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 & ½ tbs
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Kali mirch (Black pepper) crushed ½ tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Yakhni (Stock) 2 Cups Substitute: Chickpea water 2 Cups
-Hot water 2 Cups or as required
-Channa (Chickpeas) 1 & ½ Cup (boiled with salt)
-Baking soda ¼ tsp
-Hari mirch (Green chillies) 3-4
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Koftay (Meatballs):
-In a bowl,add beef mince,onion,ginger garlic paste,salt,red chilli powder,black pepper powder & garam masala powder.
-Squeeze bread to remove water,add in bowl & mix until well combined.
-Wet hand with water,take a mixture (40g) & make meatballs of equal sizes (makes 15-16) & set aside.
Prepare Curry:
-In a spice mixer,add star anise,green cardamom,black cardamom,cinnamon sticks,cloves & cumin seeds,grind to make powder & set aside.
-In a jug,add onion,tomato,ginger,garlic & water,blend well & set aside.
-In a pot,add clarified butter & let it melt.
-Add cumin seeds & mix well.
-Add Kashmiri red chilli powder & mix well.
-Add blended tomato mixture,mix well & cook on medium flame for 4-5 minutes.
-Add salt,coriander seeds,red chilli powder,black pepper crushed,red chilli crushed,turmeric powder, ground spices (reserve 1 tsp for later use),mix well & cook on medium flame for 4-5 minutes or until ghee separates.
-Add stock/chickpea water & mix well.
-Add hot water,mix well & bring it to boil and cook until ghee separates (5-6 minutes).
-Add prepared koftay,cover & cook on low flame 10-12 minutes.
-Add boiled chickpeas & mix well.
-Add baking soda & mix well.
-Add green chillies,fresh coriander,reserved spice mix,cover & simmer on low flame for 8-10 minutes.
-Garnish with fresh coriander & serve!

-Bowl mein beef qeema,pyaz,adrak lehsan paste,namak,lal mirch powder,kali mirch powder aur garam masala powder dal dein.
-Bread ko pani mein sa nikal ker squeeze ker lein aur bowl mein dal ker ache tarhan mix ker lein.
-Haath ko pani sa geela ker lein,mixture (40g) lein aur ek jaisay sizes ka koftay tayyar ker lein (makes 15-16) & side per rakh dein.
Prepare Curry:
-Spice mixer mein hari elaichi,badi elaichi,darchini,laung aur zeera dal frin aur grind ker ka powder Tayyar ker lein & side per rakh dein.
-Jug mein pyaz,tamatar,adrak,lehsan aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
-Pot mein ghee dal ker melt ker lein.
-Zeera dal ker ache tarhan mix karein.
-Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Blended tomato mixture dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Namak,sabut dhania,lal mirch powder,kali mirch crushed,lal mirch crushed,haldi powder aur ground
spices (reserve 1 tsp for later use) dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes ya ghee alag ho janay tak paka lein.
-Yakhni/channa ka pani dal ker ache tarhan mix karein.
-Garam pani dal ker ache tarhan mix karein aur ubal anay dein & ghee alag ho janay tak paka lein (5-6 minutes).
-Tayyar koftay dal ker dhak dein aur halki ancch per 10-12 minutes kliya paka lein.
-Boiled channa dal ker ache tarhan mix ker lein.
-Baking soda dal ker ache tarhan mix karein.
-Hari mirch,hara dhania aur tayyar spice mix dal ker dhak dein aur halki ancch per 8-10 minutes kliya dum per rakh dein.
-Hara dhania dal ker serve karein!
