Ingredients:
Prepare Mava Filling:
-Olper’s Milk powder 1 & ½ Cup
-Sugar powdered 1 & ½ tbs
-Khopra (Desiccated coconut) 2 tbs
-Olper’s Milk ½ Cup
Prepare Sheera (Sugar Syrup):
-Sugar 2 & ½ Cups
-Hari elaichi (Green cardamom) 3-4
-Water 3 Cups
-Zarda ka rang (Orange food color) 1 pinch (optional)
-Lemon juice ½ tsp
Prepare Gulab Jamun:
-Olper’s Tarrka Desi Ghee 1/3 Cup
-Olper’s Milk powder 2 Cups
-Baking soda ¼ tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Sooji (Semolina) 1 & ½ tbs
-Anday (Egg) whisked 2 tbs
-Water ½ Cup
-Maida (All-purpose flour) sifted 1 Cup
-Olper’s Tarrka Desi Ghee for frying
-Badam & Pista (Almonds & Pistachios) sliced
Directions:
Prepare Mava Filling:
-In a frying pan,add milk powder,sugar,desiccated coconut,milk & whisk until well combined.
-Turn on the flame & cook on low flame until it leaves the sides of pot,mix continuously & set aside.
Prepare Sheera (Sugar Syrup):
-In a pot,add sugar,green cardamom,water & mix well,bring it to boil & cook until sugar is dissolved.
-Add orange food color,lemon juice,mix well & set aside.
Prepare Gulab Jamun:
-In a pot,add clarified butter,let it melt on very low flame than take out in a bowl & solidify ghee with the help of ice block,mix & knead well until creamy (2-3 minutes).
-Add milk powder & mix well until it crumbles.
-Add baking soda,cardamom powder,semolina,eggs & mix well.
-Gradually add water & mix until well combined.
-Add all-purpose flour & mix well for 2-3 minutes.
-Now spread the mixture on the sides of bowl & refrigerate for 20-30 minutes or leave at room temperature for 1 hour.
-Gently scrap the side of bowl & gather the dough.
-Grease hands with oil,knead & stretch dough with the help of your palm until smooth and no lumps (1-2 minutes).
-Take a small quantity of dough (35g) & make oval shape balls of equal sizes.Make sure its smooth & have no cracks (makes 16-18).
-In a wok,add clarified butter & let it melt.
-Make sure ghee is not very hot,add gulab jamun balls & cook on very low heat until they float on surface & continue frying on low flame until golden brown (8-10 minutes).Stir gently in between.
-Reheat sugar syrup,directly add gulab jamun in hot sugar syrup & & cook on medium flame for 2-3 minutes.
-Turn off the flame & let them soak in sugar syrup for 4-5 hours.
-Take out gulab jamun from sugar syrup,slit from center & stuffed with prepared mava filling.
-Garnish with almonds & pistachio and serve!
