Ingredients:
Prepare Mini Naan:
- Lukewarm water ½ Cup
- Bareek cheeni (Caster Sugar) 1 & ½ tsp
- Khameer (Instant yeast) 1 & ½ tsp
- Maida (All-purpose flour) sifted 3 Cups
- Namak (Salt) 1 tsp or to taste
- Baking soda ½ tsp
- Cooking oil 2 tbs
- Doodh (Milk) lukewarm ½ Cup
- Doodh (Milk)
- Til (Sesame seeds)
- Salt water (salt 1 tbs + water ¼ Cup)
- Prepare Palak Handi:
- Boiling water as required
- Spinach (Palak) chopped 1 kg
- Ice chilled water as required
- Cooking oil 2-3 tbs
- Pyaz (Onion) chopped 1 medium
- Lehsan (Garlic) crushed 1 tbs
- Hari mirch (Green chillies) slit 6-7
- Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
- Haldi powder (Turmeric powder) ½ tsp
- Garam masala powder ½ tsp
- Lal mirch (Red chlli) crushed 1 tsp
- Namak (Salt) ½ tsp or to taste
- Tamatar (Tomatoes) pureed 1 Cup
- Makai ka atta (Maize flour) 1 & ½ tbs
- Cream 2 tbs (optional)
- Kasuri methi (Dried fenugreek leaves) 1 tsp
Prepare Tadka:
- Cooking oil 3-4 tbs
- Lehsan (Garlic) sliced 3-4 cloves
- Zeera (Cumin seeds) 1 tsp
- Sabut lal mirch (Button red chllies) 4-5
Directions:
Prepare Mini Naan:
In a jug,add lukewarm water,sugar,instant yeast & mix well,cover & let it rest for 10 minutes.
In a bowl,add all-purpose flour,salt,baking soda & mix well.
Add cooking oil & mix well.
Add yeast mixture & mix well until it crumbles.
Gradually add milk & knead until dough is formed,cover & let it proof for 1 hour (warm place).
Sprinkle dry flour & knead dough again until smooth.
Take a small dough (60g),make a smooth ball & roll out with the help of rolling pin (4.5 inch).
Make gashes with the help of finger tips,apply milk with the help of brush & sprinkle sesame seeds then flip & apply salt water with the help of brush on the back side of the naan.
On heated iron griddle (inverted/straight),place naan (wet side down) & cook on low flame until it starts to bubble and bottom has browned then flip griddle and cook top side on direct flame until it’s charred (makes 12-13).
Prepare Palak Handi:
In boiling water,add spinach & blanch for 4-5 minutes then strain,add in ice chilled water & let it rest for 3-4 minutes then strain.
In a chopper,add strained & blanched spinach,chop coarsely & set aside.
In a clay pot,add cooking oil,onion & sauté until translucent.
Add garlic,green chillies,mix well & cook for 2-3 minutes.
Add coriander seeds,turmeric powder,garam masala powder,red chilli crushed,salt & mix well.
Add pureed tomatoes & mix well,cover & cook for 2-3 minutes.
Add chopped spinach & mix well,cover & cook on low flame for 5-6 minutes.
Add maize flour & mix well.
Turn off the flame,add cream & mix well.
Turn on the flame & cook for 1-2 minutes.
Add dried fenugreek leaves,cover & simmer on low flame for 2-3 minutes.
Prepare Tadka:
In a frying pan,add cooking oil & heat it.
Add garlic,cumin seeds,button red chillies,mix well & fry until golden.
Add pour prepared tadka on palak handi.
Serve mini naan with palak handi.

Jug mein neem garam pani,cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 10 minutes kliya chor dein.
Bowl mein maida,namak aur baking soda dal ker ache tarhan mix karein.
Cooking oil dal ker ache tarhan mix ker lein.
Khameer mixture dal ker crumble ho janay tak ache tarhan mix ker lein.
Thora thora ker ka doodh shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 1 hour proof hunay kliya chor dein (warm place).
Maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
Chota dough lein (60g) aur smooth ball bana ker rolling pin ki madad sa bail lein (4.5 inch).
Finger tips ki madad sa gashes laga lein,brush ki madad sa doodh laga lein aur til chirak dein phir flip ker ka naan ki dosri side per salt water laga lein.
Tawa garam karein (inverted/straight) aur naan (wet side down) ko halki ancch per paka lein yahan tak ka bubbles ajayein aur bottom se brown ho jayein phir tawa ko flip karein aur top side ko directly chulay per charred hunay tak paka lein (makes 12-13).
Prepare Palak Handi:
Boiling water mein palak dal dein aur 4-5 minutes kliya blanch ker lein phir strain ker ka ice chilled water mein dal ker 3-4 minutes kliya chor dein phir strain ker lein.
Chopper mein strained & blanched palak coarsely chop ker lein & side per rakh dein.
Clay pot mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
Lehsan aur hari mirchein dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Sabut dhania,haldi powder,garam masala powder,lal mirch crushed aur namak dal ker ache tarhan mix ker lein.
Pureed tamatar dal ker ache tarhan mix karein aur dhak ker 2-3 miutes kliya paka lein.
Chopped palak dal ker ache tarhan mix karein aur dhak ker halki ancch per 5-6 minutes kliya paka lein.
Makai ka atta dal ker ache tarhan mix karein.
Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
Chulha on karein aur 1-2 minutes kliya paka lein.
Kasuri methi dal ker dhak deui aur halki ancch per 2-3 minutes kliya dum per rakh dein.
Prepare Tadka:
Frying pan mein cooking oil dal ker garam karein.
Lehsan,zeera aur sabut lal mirch dal ker ache tarhan mix karein aur golden ho janay tak fry ker lein.
Tayyar tadka ko palak handi mein dal dein.
Mini naan ko palak handi ka saath serve karein.
