Ingredients:
-Mutton mix boti & chops 750g
-Namak (Salt) 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Water 4 Cups
-Cornflour ¼ Cup
-Anda (Egg) 1
-Tamatar (Tomatoes) 3-4 medium
-Pyaz (Onion) 1 large
-Badam (Almonds) 12-14
-Water ¾ Cup
-Cooking oil 3-4 tbs
-Darchini (Cinnamon sticks) 2
-Sabut kali mirch (Black peppercorns) 10-12
-Badi elaichi (Black cardamom) 1
-Zeera (Cumin seeds) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Dhania powder (Coriander powder) 1 & ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Cream
-Kasuri meethi (Dried fenugreek leaves)
-Hari mirch (Green chilli) sliced
Directions:
-In a pot,add mutton,salt,ginger garlic paste,water,mix well & bring it to boil (remove scum),cover & cook on medium flame until mutton is tender (35-40 minutes).
-Take out mutton mix boti in a bowl & reserve mutton stock for later use.
-In mutton mix boti,add cornflour,egg & mix well.
Option # 1:
-Air fry in preheated air fryer at 180C for 10-12 minutes & set aside.
Option # 2:
-Shallow fry in cooking oil on low flame until golden brown.
-In a saucepan,add tomatoes,onion,almonds,water,mix well & bring it to boil,cover & cook on medium flame for 4-5 minutes then cook on medium flame for 2-3 minutes.
-Let it rest for 5 minutes & transfer to a blender jar,blend well & set aside.
-In a pot,add cooking oil,cinnamon sticks,black peppercorns,black cardamom,cumin seeds and mix well.
-Add blended mixture,mix well & cook for a minute.
-Add ginger garlic paste,salt,red chilli powder,black pepper powder,coriander powder,Kashmiri red chilli powder,nutmeg powder & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates.
-Now add air fried mutton & mix well.
-Add reserved mutton stock (approx. 1 Cup),mix well & bring it to boil,cover & cook on low flame until oil separates (2-3 minutes).
-Garnish with cream,dried fenugreek leaves,green chilli & serve.

Directions:
-Pot mein mutton,namak,adrak lehan paste aur namak dal ker ache tarhan mix karein aur ubal anay ka bad scrum ko remove ker lein,dhak dein aur darmiyani ancch per gosht gul janay tak paka lein (35-40 minutes).
-Mutton mix boti ko bowl mein nikal lein aur mutton yakhni ko bad mein use kernay kliya side per rakh dein.
-Mutton mix boti emin cornflour aur anda dal ker ache tarhan mix ker lein.
Option # 1:
-Preheated air fryer mein 180C per 10 minutes ya light golden ho janay tak air fry ker lein & side per rakh dein.
Option # 2:
-Cooking oil mein halki ancch per golden brown ho janay tak paka lein.
-Saucepan mein tamatar,pyaz,badam aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 4-5 minutes kliya paka lein phir darmiyani ancch per 2-3 minutes kliya paka lein.
-5 minutes kliya rest dein aur blender jug mein dal ker ache tarhan blend ker lein & side per rakh dein.
-Pot mein cooking oil,darchini,sabut kali mirch,badi elaichi aur zeera dal ker ache tarhan mix ker lein.
-Blended mixture dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Adrak lehsan paste,namak,lal mirch powder,kali mirch powder,dhania powder,Kashmiri lal mirch powder aur jaifil powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-Ab air fried mutton dal ker ache tarhan mix ker lein.
-Reserved mutton yakhni (approx. 1 Cup) dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Cream,kasuri meethi aur hari mirch sa garnish ker ka serve karein.
