Ingredients:
Prepare Mutton Chops:
- Mutton chops 1kg
- Namak (Salt) 1 tsp or to taste
- Kacha papita (Raw papaya) paste ½ tbs
- Adrak lehsan paste (Ginger garlic paste) ½ tbs
- Garam masala powder ½ tsp
- Lal mirch (Red chilli) crushed 1 tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Baisan (Gram flour) roasted 1 tbs
- Zeera powder (Cumin powder) 1 & ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Chaat masala 1 tsp
- Dahi (Yogurt) 1 tbs
- Lemon juice 3 tbs
- Cooking oil 2-3 tbs
Prepare Aloo Tikki:
- Aloo (Potatoes) boiled 4-5 medium
- Lal mirch (Red chilli) crushed 1 tsp
- Namak (Salt) 1 tsp or to taste
- Sabut dhania (Coriander seeds) crushed 1 tsp
- Chaat masala 1 tsp
- Chawal ka atta (Rice flour) 2-3 tbs
- Kali mirch powder (Black pepper powder) 1 tsp
- Hari mirch (Green chilli) chopped 1-2 tbs
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Hara pyaz (Spring onion) chopped ½ Cup
- Hara dhania (Fresh coriander) chopped handful
- Cornflour 4-5 tbs or as required
- Water ½ Cup
- Cooking oil for frying
Prepare Salad:
- Band gobhi (Cabbage) shredded 1 & ½ Cup
- Gajar (Carrots) julienne ½ Cup
- Pyaz (Onion) sliced 1 Cup
- Purple cabbage shredded 1 & ½ Cup
- Namak (Salt) to taste
- Kali mirch powder (Black pepper powder) to taste
Directions:
Prepare Mutton Chops:
In a bowl,add lamb/mutton chops,salt,raw papaya paste & mix well,cover & marinate for 4 hours in refrigerator.
Add ginger garlic paste,garam masala powder,red chilli crushed,black pepper powder,gram flour, cumin powder,red chilli powder,chaat masala,yogurt,lemon juice and mix well,cover & marinate for 1 hour.
Grease grill pan with cooking oil.
Add marinated chops and grill on medium low flame until done (6-8 minutes each side).
Prepare Aloo Tikki:
In a bowl,add potatoes & mash well with the help of masher.
Add red chilli crushed,salt,coriander seeds,chaat masala,rice flour,black pepper powder,green chilli, ginger garlic paste,spring onion,fresh coriander & mix until well combined.
Grease hands with oil,take a small quantity of mixture (65g) and make tikki of equal sizes.
In a bowl,add cornflour,water & whisk well.Flour slurry is ready!
Now dip aloo tikki in prepared flour slurry.
In a frying pan,add cooking oil & fry aloo tikki on medium flame from both sides until golden brown (makes 11-12).
Prepare Salad:
In a bowl,add cabbage,carrots,onion,purple cabbage,salt,black pepper powder,mix well & set aside.
On a serving platter,add aloo tikki,lamb/mutton chops,salad and serve with saffron rice

Prepare Mutton Chops:
Bowl mein lamb/mutton chops,namak aur kacha papita paste dal ker ache tarhan mix karein aur dhak ker 4 hours kliya refrigerator mein marinate ker lein.
Adrak lehasn paste,garam masala powder,lal mirch crushed,kali mirch powder,baisan,zeera powder, lal mirch powder,chaat masala,dahi aur lemon juice dal ker ache tarhan mix karein aur dhak ker 1 hour kliya marinate ker lein.
Grill pan ko cooking oil sa grease ker lein.
Marinated chops dal dein aur darmiyani halki ancch per grill ker lein (6-8 minutes each side).
Prepare Aloo Tikki:
Bowl mein aoo dal dein aur masher ki madad sa ache tarhan mash ker lein.
Lal mirch crushed,namak,sabutr dhania,chaat masala,chawal ka atta,kali mirch powder,hari mirch, adrak lehsan paste,hara pyaz aur hara dhania dal ker ache tarhan mix ker lein.
Haathon ko oil sa grease karein aur mixture ki small quantity (65g) la ker ek jaisay sizes ki tikki tayyar ker lein.
Bowl mein cornflour aur pani dal ker ache tarhan whisk ker lein.Flour slurry tayyar hai.
Ab aloo tikki ko tayyar flour slurry mein dip ker lein.
Frying pan mein cooking oil dal dein aur aloo tikki ko darmiyani ancch per dono sides sa golden brown ho janay tak fry ker lei (makes 11-12).
Prepare Salad:
Bowl mein band gobhi,gajar,pyaz,purple cabbage,namak aur kali mirch powder dal ker ache tarhan mix ker lein & side per rakh dein.
Serving platter mein aloo tikki,lamb/mutton chops aur salad dal dein aur saffron rice ka saath serve karein.
