Ingredients:
-Mango cubes 500g or as required
-Sugar 1 tbs
-Olper’s milk 1 & ½ litre
-Sugar ½ Cup
-Khoya or Ground bread ¼ Cup
-Elaichi powder (Cardamom powder) ¼ tsp
-Mango essence 1 tsp
-Pista (Pistachios) sliced 1-2 tbs
-Badam (Almonds) sliced 1-2 tbs
Assembling:
-Sugar syrup
-Khopra (Desiccated coconut)
-Balushahi
-Mango chunks
-Olper’s cream
-Pista (Pistachios) sliced
-Badam (Almonds) sliced
-Cherry
Directions:
-In a blender jug,add mango cubes and blend to make a puree (approx. 2 & ½ Cups required).
-In a saucepan,add mango puree,sugar,mix well & cook on low flame for 2-3 minutes.
-Let it cool completely.
-In a wok,add milk,bring it to boil & cook on low flame for 1 hour & keep sticking balai (cream) on the sides of the pot until one third of milk is reduced.
-Add sugar,khoya or ground bread,cardamom powder,mango essence,mix well and cook on medium flame for 6-8 minutes.
-Scrap balai (cream) from the sides of the pot,mix gently & cook on medium flame for 2-3 minutes.
-Remove from flame and let it cool.
-Add ¾ cup of prepared mango puree (reserve remaining for later use),pistachios,almonds & mix well.
Assembling:
-Dip serving glass/bowl in sugar syrup & coat with desiccated coconut.
-Now add reserved mango puree,balushahi (crush with the help of hand),prepared mango rabri, mango chunks & garnish with cream,pistachios,almonds,cherry & serve chilled!

-Saucepan mein mango puree dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
-Thanda ker lein.
-Karahi mein doodh dal ker ubal lein aur halki ancch per 1 hour kliya paka lein aur balai (cream) ko pots ko sides per lage lein yahan tak ka one third doodh reduce ho jaye.
-Cheeni,khoya or ground bread,elaichi powder aur mango essence dal ker ache tarhan mix karein aur darmiyani ancch per 6-8 minutes kliya paka lein.
-Balai (cream) ko pot ki sides sa nikal lein,gently mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Chulhay sa hata lein aur thanda ker lein.
-3/4 cup tayyar mango puree (reserve remaining for later use),pista aur badam dal ker ache tarhan mix ker lein.
Assembling:
-Serving glass/bowl ko sugar syrup mein dip karein aur khopra sa coat ker lein.
-Reserved mango puree,balushahi (crush with the help of hand),tayyar mango rabri & mango chunks dal dein,cream,pista,badam aur cheery sa garnish ker ka thanda serve karein!
