Ingredients:
Prepare Meethi Khajoor Chutney:
-Gur (Jaggery) 1 Cup (140g)
-Khajoor (Dates) deseeded 9-10
-Namak (Salt) ¼ tsp or to taste
-Lal mirch powder (Red chilli powder) ¼ tsp or to taste
-Water 1 Cup
Prepare Imli ki Khatti Chutney:
-Imli pulp (Tamarind pulp) 1 & ½ Cup (100g of tamarind soaked in 1 & ½ Cup of water)
-Water ½ Cup
-Namak (Salt) ¼ tsp or to taste
-Adrak powder (Ginger powder) 1 tsp
-Kala namak (Black salt) ½ tsp
-Chaat masala 1 & ½ tsp
-Cornflour ½ tbs
Prepare Potato Chops:
-Besan (Gram flour) sifted 1 & ½ Cup
-Zeera (Cumin seeds) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Zarda ka rang (Orange food color) 1 pinch
-Baking soda ½ tsp
-Cooking oil 1 tbs
-Water 1 & ½ Cup
-Aalo (Potatoes) boiled 4-5 medium
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Chaat masala ½ tsp
-Lehsan paste (Garlic paste) 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Cooking oil for frying
Assembling:
-Safed chanay (Chickpeas) boiled
-Tamatar (Tomato) deseeded & chopped
-Pyaz (Onion) chopped
-Hari mirch (Green chilli) chopped
-Chaat masala
-Dahi (Yogurt) whisked
-Green chutney
-Pyaz (Onion) sliced
-Papri
-Beetroot julienne
-Hari mirch (Green chillies) chopped
-Hara dhania (Fresh coriander) chopped
-Chaat masala
Directions:
Prepare Meethi Khajoor Chutney:
-In a saucepan,add jaggery,dates,salt,red chilli powder,water,mix well & bring it to boil,cover & cook on low flame for 4-5 minutes.
-Now mash well with the help of masher,mix well & cook for 1-2 minutes.
-Let it cool.
Prepare Imli ki Khatti Chutney:
-In a saucepan,add tamarind pulp,water,salt,ginger powder,black salt,chaat masala,cornflour & whisk well.
-Turn on the flame,bring it to boil & cook until it thickens (2-3 minutes).
-Let it cool.
Prepare Potato Chops:
-In a bowl,add gram flour,cumin seeds,salt,orange food color,baking soda,cooking oil & whisk well.
-Gradually add water,whisk well & beat well for 2-3 minutes & let it rest for 10 minutes.
-In a bowl add potatoes & mash well with the help of masher.
-Add salt,red chilli powder,coriander seeds,turmeric powder,red chilli crushed,chaat masala,garlic paste,fresh coriander & mix well.
-Grease hands with oil,take a small quantity of mixture (60g) & make patties or kababs of equal sizes.
-In a frying pan,heat cooking oil,now dip potato chops in prepared batter & fry on medium flame from both sides until golden (makes 10).
Assembling:
-In a serving platter,add chickpeas,tomato,onion,green chilli,chaat masala,fried potato chops, yogurt,green chutney,prepared imli ki khatti chutney,onion,prepared meethi khajoor chutney,papri, beetroot,green chilli,fresh coriander,chaat masala & serve!

Directions:
Prepare Meethi Khajoor Chutney:
-Saucepan mein gur,khajoor,nama,lal mirch powder aur pani dal ker ache tarhan mix ker lein aur ubal anay ka bad dhak dein aur halki ancch per 4-5 minutes kliya paka lein.
-Ab masher ki madad sa ache tarhan mash karein phir ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Thanda ker lein.
Prepare Imli ki Khatti Chutney:
-Saucepan mein imli pulp,pani,namak,adrak powder,kala namak,chaat masala aur cornflour dal ker ache tarhan whisk ker lein.
-Chulha on karein aur ubal anya ka bad garha ho janay tak paka lein (2-3 minutes).
-Thanda ker lein.
Prepare Potato Chops:
-Bowl mein besan,zeera,namak,zarda ka rang,baking soda aur cooking oil dal ker ache tarhan whisk ker lein.
-Thora thora ker ka pani shamil karein,ache tarhan whisk karein aur 2-3 minutes kliya ache tarhan beat ker lein aur 10 minutes kliya rest dein.
-Bowl mein aalo dal ker masher ki madad sa ache tarhan mash ker lein.
-Namak,lal mirch powder,sabut dhania,haldi powder,lal mirch crushed,chaat masala,lehsan powder aur hara dhania dal ker ache tarhan mix ker lein.
-Haathon ko oil sa grease karein aur mixture ki small quantity (60g) la ker ek jaisay sizes ka kababs or patties tayyar ker lein.
-Frying pan mein cooking oil garam karein,potato chops ko tayyar batter mein dil karein aur darmiyani ancch per dono sides sa golden ho janay tak fry ker lein (makes 10).
Assembling:
-Serving platter mein safed chanay,tamatar,pyaz,hari mirch,chaat masala,fried potato chops,dahi,hari chutney,tayyar imli ki khatti chutney,pyaz,tayyar meethi khajoor ki chutney, papri,chuqandar, hari mirch,hara dhania aur chaat masala dal ker serve karein!
