Ingredients:
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Chaat masala 1 tsp
-Kurkure chips 100g
-Anday (Eggs) 3
-Maida (All-purpose flour) ½ Cup
-Chawal ka atta (Rice flour) ½ Cup
-Dried parsley 1 tsp
-Namak (Salt) ½ tsp or to taste
-Baingan (Eggplant) long 4 medium
-Cooking oil for frying
-Mayonnaise
-Tomato ketchup
-Hara dhania (Fresh coriander) chopped
-Lal mirch (Red chilli) chopped
Directions:
-In a bowl,add red chilli powder,salt,cumin powder,garlic powder,chaat masala,mix well & set aside.
-In a chopper,add kurkure chips & chop well.
-In a dish,add eggs & whisk well.
-In another dish,add all-purpose flour,rice flour,dried parsley,salt,chopped kurkure & mix well to combine.
-Cut eggplant tip & peel it (don’t remove the head).
-Cut eggplant (longitudinally) into thin strips.
-Spread eggplant strips on a clean working surface and sprinkle prepared seasoning over it.
-Now dip into whisked eggs then coat well with coating.
Option # 1: Frying
-In a wok,heat cooking oil & fry on medium flame until golden & crispy.
Option # 2: Baking
-On a baking tary,place butter paper and grease with oil and place baingan pakora.
-Bake in preheated oven at 180C for 12-15 minutes.
Option # 3: Air-Fry
-Air fry at 180C for 10 minutes.
-Drizzle mayonnaise,tomato ketchup,sprinkle fresh coriander,red chilli & serve!

-Alag dish mein maida,chawal ka atta,dried parsley,namak aur chopped kurkure dal ker ache tarhan mix ker lein.
-Baingan ki tip ko cut ker ka peel ker lein (don’t remove the head).
-Baingan ko (longitudinally) thin strips mein cut ker lein.
-Baingan ki strips ko clean working surface per rakh ka pheela lein aur tayyar seasoning ko sprinkle ker lein.
-Ab pheetay hoye anday mein dip karein phir coating mein ache tarhan coat ker lein.
Option # 1: Frying
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein.
Option # 2: Baking
-Baking tray per butter paper laga lein aur cooking oil sa grease ker ka baingan pakora rakh dein.
-Preheated oven mein 180C per 12-15 minutes kliya bake ker lein.
Option # 3: Air-Fry
-180C per 10 minutes kliya air fry ker lein.
-Mayonnaise,tomato ketchup,hara dhania & lal mirch dal ker serve karein!
