Ingredients:
Prepare Smoky Double Hari Mirch Qeema:
-Kashmiri lal mirch (Kashmiri red chillies) soaked 2-3
-Dahi (Yogurt) thick ¾ Cup
-Hari mirch (Green chillies) 5-6
-Cooking oil ½ Cup or as required
-Pyaz (Onion) sliced 3 medium
-Hari mirch paste (Green chilli paste) ½ tbs
-Beef qeema (Mince) 750g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper crushed) 1 tsp
-Garam masala powder ½ tsp
-Hari mirch (Green chillies) sliced4-5 or as required (add green chillies as per your liking)
-Hara dhania (Fresh coriander) chopped handful
-Charcoal for smoke
Prepare Crispy Lifafa Chakoor Paratha:
-Anda (Egg) 1
-Sugar 1 tbs
-Water 1 Cup
-Fine atta (Fine flour) sifted 3 Cups
-Namak (Salt) ½ tbs
-Ghee (Clarified Butter) 2 tbs
-Ghee (Clarified Butter) melted 1 tsp
-Ghee (Clarified butter) melted 2 tsp
-Ghee (Clarified butter) 1 tsp or as required
-Adrak (Ginger) julienne
Directions:
Prepare Smoky Double Hari Mirch Qeema:
-In a spice grinder,add Kashmiri red chillies,yogurt & grind well to make a paste & set aside.
-Deseed green chillies & cut into julienne shape & set aside.
-In a wok,add cooking oil,green chillies & fry on low flame until crispy (2 minutes) & reserve for garnishing.
-In the same oil,add onion & fry until light golden.
-Add green chilli paste,mix well & cook for a minute.
-Add beef mince and mix well until it changes color.
-Add ginger garlic paste,red chilli powder,cumin powder,coriander seeds,salt,black pepper crushed, garam masala powder,mix well & cook for 4-5 minutes.
-Add ground paste & mix well,cover & cook on low flame for 10-12 minutes.
-Add green chillies,fresh coriander and mix well,cover & simmer on low flame for 1-2 minutes.
-Give coal smoke for 2 minutes.
Prepare Crispy Lifafa Chakoor Paratha:
-In a small jug,add egg,sugar,water,whisk well & set aside.
-In a bowl,add fine flour,salt & mix well.
-Add clarified butter & mix well until it crumbles.
-Gradually add egg mixture & knead until soft dough is formed.
-Grease dough with ghee,cover & let it rest for 30 minutes.
-Transfer the dough on a clean working surface,stretch & knead the dough until smooth (2-3 minutes).
-Take a small dough (110g) & make a smooth ball.
-Add melted clarified butter & spread the dough with the help of hands.
-Add & spread melted clarified butter,fold from all four sides to make a square shape,press & spread the dough with the help of hands,sprinkle dry flour & roll out with the help of rolling pin.
-On heated griddle,place rolled dough,add clarified butter & cook from both sides until golden & crispy (makes 9-10).
-Garnish hari mirch qeema with fried green chillies,ginger & serve with crispy lifafa chakoor paratha.

-Hari mirch ko deseed ker dein aur julienne shape mein cut ker lein & side per rakh dein.
-Karahi mein cooking oil aur hari mirch dal dein aur halki ancch per crispy ho janay tak fry ker lein & garnishing kliya reserve ker lein.
-Us he oil mein pyaz dal dein aur light golden ho janay tak fry ker lein.
-Hari mirch paste dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Beef qeema dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Adrak lehsan paste,lal mirch powder,zeera powder,sabut dhania,namak,kali mirch crushed aur garam masala powder dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Ground paste dal ker ache tarhan mix karein aur dhak ker halki ancch per 10-12 miutes kliya paka lein.
-Hari mirch aur hara dhania dal ker ache tarhan mix karein aur dhak ker halki ancch per 1-2 minutes kliya dum per rakh dein.
-2 minutes kliya koyla ka dhuwan dein.
Prepare Crispy Lifafa Chakoor Paratha:
-Chotay jug mein anda,cheeni aur pani dal ker ache tarhan whisk ker lein & side per rakh dein.
-Bowl mein fine atta aur namak dal ker ache tarhan mix karein.
-Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Thora thora ker ka anday ka mixture shamil karein aur ghond ker soft dough tayyar ker lein.
-Dough ko ghee sa grease karein aur dhak ker 30 minutes kliya rakh edin.
-Clean working surface per dough rakh dein aur dough ko smooth hunay tak stretch aur knead ker lein (2-3 minutes).
-Chota dough (110g) lein aur smooth ball bana lein.
-Melted ghee dal dein aur haath ki madad sa dough ko pheela lein.
-Melted ghee dal ker pheela lein,four sides ko fold ker ka square shape bana lein,press ker ka dough ko haath ki madad sa pheela lein,atta chirak dein aur rolling pin ki madad sa bail lein.
-Garam tawa per rolled dough rakh dein aur ghee dal ker dono side sa golden & crispy ho janay tak paka lein (makes 9-10).
-Hari mirch qeema ko fried hari mirch aur adrak sa garnish ker lein aur crispy lifafa chakoor paratha ka saath serve karein.
