Ingredients:
Prepare Dough:
-Pakola Full Cream Milk lukewarm ¾ Cup
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 2 tsp
-Maida (All-purpose flour) sifted 3 Cups
-Namak (Salt) 1 tsp
-Cooking oil 2 tsp
-Lukewarm water ½ Cup or as required
-Cooking oil 1 tsp
Prepare Chicken:
-Cooking oil 2-3 tbs
-Pyaz (Onion) sliced 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Chicken qeema (Mince) 350g
-Namak (Salt) 1 tsp pr to taste
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Hara dhania (Fresh coriander) chopped 1 tbs
Prepare Jalapeno Ranch Sauce:
-Pakola Full Cream Milk ¾ Cup
-Lemon juice 2 tbs
-Pickled jalapenos chopped 3 tbs
-Soya (Dill) chopped 3 tbs
-Hara dhania (Fresh coriander) chopped 3 tbs
-Mayonnaise ¼ Cup
-Namak (Salt) ¼ tsp or to taste
-Pakola Full Cream Milk
Directions:
Prepare Dough:
-In a jug,add milk,caster sugar,instant yeast and mix well,cover and let it rest for 5-10 minutes & set aside.
-In a bowl,add all-purpose flour,salt and mix well.
-Add cooking oil and mix well until it crumbles.
-Add yeast mixture and mix well.
-Gradually add lukewarm water and knead until dough is formed.
-Grease hand with cooking oil and knead dough again,cover and let it proof for 1 hour (warm place).
Prepare Chicken:
-In a saucepan,add cooking oil,onion and sauté until translucent.
-Add ginger garlic paste and mix well.
-Add chicken mince and mix well until it changes color.
-Add salt,cumin powder,red chilli powder and mix well,cover & cook on low flame for 6-8 minutes then cook on high flame until it dries up.
-Add fresh coriander,mix well and let it cool.
Prepare Jalapeno Ranch Sauce:
-In a bowl,add milk,lemon juice,whisk well and let it rest for 5-8 minutes.Butter milk is ready!
-Add pickled jalapenos,dill,fresh coriander,mayonnaise,salt and mix well.
-Now add cooked chicken mince,mix well & set aside.
-Sprinkle dry flour and knead dough again until smooth.
-Sprinkle dry flour and divide into 8 portions.
-Take one portion (110g of dough),make a ball,sprinkle dry flour and roll out with the help of rolling pin (roll it to 8-inch).
-On baking try (greased with cooking oil and lined with butter paper),place rolled dough,on half side of the dough,add chicken filling,apply water and fold the other side over it,press and apply water and seal the edges.
-With the help of knife slightly add cuts on the surface and apply milk on top (makes 7-8).
-Bake in preheated oven at 200C for 18-20 minutes (on both grills).

-Bowl mein maida aur namak dal ker ache tarhan mix karein.
-Cooking oil dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Khameer mixture dal ker ache tarhan mix karein.
-Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein.
-Haath ko cooking oil sa grease karein aur dough ko dubara ghond lein aur dhak ker 1 hour garam jagha per proof hunay kliya rakh dein.
Prepare Chicken:
-Saucepan mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Adrak lehsan paste dal ker ache tarhan mix karein.
-Chicken qeema dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Namak,zeera powder aur lal mirch powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 6-8 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Hara dhania dal ker ache tarhan mix karein aur thanda ker lein.
Prepare Jalapeno Ranch Sauce:
-Bowl mein doodh ur lemon juice dal ker ache tarhan whisk karein aur 5-8 minutes kliya rest dein.Butter milk tayyar hai.
-Pickled jalapenos,soya,hara dhania,mayonnaise aur namak dal ker ache tarhan mix karein.
-Ab cooked chicken qeema dal ker ache tarhan mix karein & side per rakh dein.
-Maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
-Maida chirak dein aur 8 portions mein divide ker lein.
-Ek portion (110g of dough) lein,ball bana lein aur maida chirak ker rolling pin ki madad sa bail lein (8-inch).
-Baking tray (greased with cooking oil and lined with butter paper) per rolled dough rakh dein,dough ki ek side per chicken filling dal dein,edges per pani laga lein aur dosri side ko fold ker lein,press ker ka pani laga lein aur edges ko seal ker lein.
-Knife ki madad sa surface per cuts laga ker doodh laga lein (makes 7-8).
-Preheated oven mein 20C per 18-20 minutes kliya bake ker lein (on both grills).
