Ingredients:
Prepare Dough:
-Doodh (Milk) lukewarm ¾ Cup
-Sugar 2 tsp
-Khameer (Instant yeast) 2 tsp
-Maida (all-purpose flour) sifted 3 Cups
-Namak (Salt) 1 tsp
-Cooking oil 2 tbs
-Lukewarm water ½ Cup or as required
-Cooking oil 1 tsp
Prepare Spinach & Walnuts Filling:
-Palak (Spinach) chopped ½ kg
-Namak (Salt) 1 tsp
-Cooking oil 2-3 tbs
-Pyaz (Onion) chopped 1 Cup
-Lehsan (Garlic) chopped 1 tbs
-Namak (Salt) ¼ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Sumac powder 2 tbs
-Akhrot (Walnuts) chopped 1/3 Cup
-Paprika powder 1 tsp
-Lemon juice 1 tbs
-Feta cheese
Directions:
Prepare Dough:
-In a small jug,add milk,sugar,instant yeast & mix well,cover & let it rest for 5 minutes to activate yeast.
-In a bowl,add all-purpose flour,salt & mix well.
-Add cooking oil & mix well until it crumbles.
-Add yeast mixture and mix well.
-Gradually add water & knead until dough is formed.
-Grease hand with cooking oil and knead dough again,cover & let it proof for 1 & ½ hour (warm place).
Prepare Spinach & Walnuts Filling:
-In a bowl,add spinach,salt and mix well,cover & let it rest for 10 minutes.
-On a bowl,place muslin cloth,add spinach & squeeze well to remove excess water & set aside.
-In a wok,add cooking oil,onion & sauté until translucent.
-Add garlic,mix well & cook for a minute.
-Add spinach & mix well.
-Add salt,black pepper powder,sumac powder,walnuts,paprika powder,lemon juice,mix well & cook for 1-2 minutes.
-Let it cool.
-Sprinkle dry flour and knead dough again until smooth.
-Divide the dough into two equal parts,take one part and knead dough again until smooth.
-Sprinkle dry flour and roll out with the help of rolling pin and cut into round shape with the help of the cutter (4.5” round cutter).
-On small rolled dough,add 1 tbs of spinach & walnut filling,add feta cheese and apply water on the edges.
-Hold two ends of the dough and seal them together over the filling,pinching the dough together to help bind.Fold the last side up to meet the first two sides,pinching the dough together with the first two sides to bind (makes 12-14).
-On baking tray,lined with butter paper,place Lebanese spinach pies and bake in preheated oven at 220C for 12-14 minutes.

-Bowl mein maida aur namak dal ker ache tarhan mix karein.
-Cooking oil dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Khameer mixture dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Haath ko oil sa grease karein aur dough ko dubara ghond lein aur dhak ker 1 & ½ hour proof hunay kliya garam jagha per rakh dein.
-Prepare Spinach & Walnuts Filling:
-Bowl mein palak aur namak dal ker ache tarhan mix karein aur dhak ker 10 minutes kliya chor dein.
-Bowl mein malmal ka kapra rakh dein aur palak dal ker ache tarhan squeeze ker lein & side per rakh dein.
-Karahi mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Lehsan dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Palak dal ker ache tarhan mix ker lein.
-Namak,kali mirch powder,sumac powder,akhrot,paprika powder aur lemon juice dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Thanda ker lein.
-Maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
-Dough ko do hisson mein divide ker lein,ek part lein aur smooth hunay tak dough ko dubara ghond lein.
-Maida chirak dein aur rolling pin ki madad sa bail lein aur round shape mein cutter (4.5” round cutter) ki madad sa cut ker lein
-Chota rolled dough lein,1 tbs spinach & walnut filling aur feta cheese dal dein aur edges per pani laga lein.
-Dough ka two edges ko ek saath seal karein aur pinch ker lein.Baqi do sides ko bhi seal ker ka pinch ker lein (makes 12-14).
-Baking tray per butter paper laga lein,Lebanese spinach pies rakh dein aur preheated oven mein 220C per 12-14 minutes bake ker lein.
