Ingredients:
Prepare Spice Mix:
- Zeera (Cumin seeds) ½ tbs
- Sabut kali mirch (Black peppercorns) 1 tsp
- Badi elaichi (Black cardamom) 2
- Hari elaichi (Green cardamom) 3-4
- Darchini (Cinnamon sticks) 2
- Laung (Cloves) 3-4
- Ghee (Clarified butter) 2 tbs
- Gajar (Carrots) julienne 400g
- Sugar 1 & ½ tbs
- Ghee (Clarified butter) 1-2 tbs
- Munakka (Black raisins) 5 tbs
- Ghee (Clarified butter) ½ Cup or as required
- Pyaz (Onion) sliced 2 medium
- Mutton shanks 750g
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Namak (Salt) 1 & ½ tsp or to taste
- Water 4 Cups
- Chawal (Rice) Sella ½ kg (soaked for 1 hour)
Assembling:
- Rolled dough
- Fried raisins
- Badam (Almonds) soaked 18-20
- Fried carrots
- Cooked rice
- Reserved spice mix
- Cooked meat
- Fried raisins
- Fried carrots

- Anday ki zardi (Egg yolk) 1
- Doodh (Milk) 1 tbs
- Kalay & Safed til (Black & white sesame seeds)
Directions:
Prepare Spice Mix:
In a spice mixer,add cumin seeds,black peppercorns,black cardamom,green cardamom,cinnamon sticks, & cloves,grind to make powder and set aside.
In a pot,add clarified butter & let it melt.
Add carrots,sugar,mix well & fry for 2-3 minutes,take out & reserve for later use.
In the same pot,add clarified butter & let it melt.
Add black raisins & fry for 1 minute,takeout in a bowl & reserve for later use.
In the same pot,add clarified butter & let it melt.
Add onion & fry until light golden.
Add mutton shanks and mix well until it changes color.
Add ginger garlic paste,salt,mix well & cook for 2-3 minutes.
Now add prepared spice mix,reserve 1 tbs for later use & mix well.
Add water,mix well & bring it to boil.
Remove scum,cover & cook on low flame until tender (35-40 minutes) (approx. 2 Cups of water should remain).
Now take out cooked meat from the pot & reserve for later use.
In stock,add soaked rice,mix well & bring it to boil,cover & steam cook on low flame until 3/4th done (10-15 minutes) & set aside.
On a bowl,place rolled dough (all-purpose flour),add fried raisins,almonds,fried carrots,cooked rice, sprinkle half of spice mix (reserved),cooked meat,fried black raisins,fried carrots,remaining spice mix,cooked rice & fold the edges to close then flip on baking tray.
In egg yolk,add milk & whisk well.
Apply on dough with the help of brush & sprinkle sesame seeds.
Bake in preheated oven at 200C for 10 minutes (on both grills).
Carefully cut the dough & serve with 7up.

Pot mein ghee dal ker melt ker lein.
Gajar aur cheeni dal ker ache tarhan mix karein aur 2-3 minutes kliya fry ker lein aur bad mein use kernay kliya side per rakh dein.
Us he pot mein ghee dal ker melt ker lein.
Munakka dal ker ek minute kliya fry ker lein,bowl mein nikal lein aur bad mein use kernay kliya side per rakh dein.

Pyaz dal ker light golden ho janay tak fry ker lein.
Mutton shanks dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
Adrak lehsan paste aur namak dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Ab tayyar spice mix dal ker ache tarhan mix ker lein aur 1 tbs ko bad mein use kernay kliya side per rakh dein.
Pani dal ker ache tarhan mix karein aur ubal anay dein.
Scum ko nikal lein aur dhak ker halki ancch per gul janay tak paka lein (35-40 minutes) (approx. 2 Cups water should remain).
Ab cooked meat ko pot mein sa nikal lein aur bad mein use kernay kliya side per rakh dein.
Yakhni mein chawal dal ker ache tarhan mix karein aur ubal anay dein,dhak dein aur halki ancch per 3/4th done ho ho janay tak steam cook ker lein (10-15 minutes) & side per rakh dein.
Bowl mein rolled dough (all-purpose flour) rakh dein,fried munakka,fried gajar,cooked chawal,half spice mix (reserved),cooked meat,fried munakka,fried gajar,remaining spice mix aur cooked chawal dal dein aur dough ka edges ko fold ker lein aur baking tray per flip ker lein.
Anday ki zardi mein doodh dal ker ache tarhan whisk ker lein.
Brush ki madad sa dough ka upper laga lein aur til chirak dein.
Preheated oven mein 200 C per 10 minutes kliya bake ker lein (on both grills).
Dough ko cut ker lein aur 7up ka saath serve karein.
